inflation triples the cost of ingredients. the owner of georgia's northside took to facebook to cling to customers why their bills would be bigger. how bad could it get? >> kind of unreal at the moment. every day is an adventure. i go to the market and wait to see what i am facing but it is changing on a daily basis. >> 4.2% increase in the last 12 months, let's break this down by certain items. i read that you use a lot of beef brisket, barbecue seasoning, a lot of people use it. up 185%, chicken breast up 70%, oil prices up 100%. with everybody so health-conscious and using gloves, glove prices up 300%. a quick economics class on restaurant economics, how much does my bill go up because of that?

>> pretty complicated but the baseline for a restaurant, the golden lose you want 25% food cost or below, the components of running the business be it trash pickup, labor, all that stuff. makes the majority of the rest of it so when you have your set price, if your burger is $12 and beef goes up 100% it is easy to understand where that money comes from. it comes from the profitability of the restaurant and all restaurants are being faced with the same situation which they are forced to raise costs and it is hard when you look at your customers and season people are continuing to come and other people, you definitely know are not dining like they used to and it is clear economics are

driving customers away. todd: last year you didn't make a lot of money because you were closed, the pandemic forced you to close. it is difficult to come to a year you thought everything was going to be great and then get hit with this double whammy of increased food prices. that said why do you think all this is happening? is about covid related or something else? >> there are a bunch of things that go into it. first things first, covid turned the supply chains upside down, a year ago from april to may, basically the same thing, to be transferred with my customers, to let them know what i'm facing because in the end when they are shopping with me they are facing too and in a 30 day stretch from april to may last year briskets, my cost went from 269 a pound to 693 a pound. the numbers don't lie and my

customer base was really supportive and pretty much said we love what you do, we will still come but i raised prices then, the wholesale cost stabilized and the market calms down after the covid outbreak, processing plant and all that stuff. i lowered prices back to the original levelland now as we go into the summer season, the last couple and we've seen the same sort of trends but more generalized, very specifically meet related but it is like a sitcom where you have a huge container ship blocking the suez canal, the russian hackers going wild on the east coast gas
