>> jimmy: up high, okay. >> flip it over. >> jimmy: nice. >> then i just take a touch of water. in my hand just to moisten it. just dissolves and creates a meat paste. just that work it in with your hand. >> jimmy: work it in there and throw it on the grill. how hot is the grill? >> pretty hot. it was a lot hotter earlier. just really want it to be -- fire up a little bit. >> jimmy: you don't worry about that. >> i'm an active griller. people say, you know what, don't move it. >> jimmy: you move it a lot. >> i move it a lot because i want it to temper on both sides and drop it up here which is kind of like makeshift grill. >> jimmy: we don't have time to cook this whole thing all the way through. >> so i have this. >> jimmy: you season it while it's on the grill. >> exactly. >> jimmy: with. >> with this herb brush. >> jimmy: this is -- what herbs do you have. >> sage, rosemary, thyme.

>> jimmy: tie it to a wooden spoon with dental floss. >> just keeping it flipped and get something like this. >> jimmy: oh, is a beautiful piece -- >> kind of souffles up a little. it puffs up. >> jimmy: it looks like it's burnt. but -- >> it's charred. what it is is it's not burnt but like right in between, browned and charred. so you really need that particularly for dry age steaks. you'll taste it. it makes a big difference. >> jimmy: where is guillermo, by the way. yeah, be a part of this. see what's going on. now, okay, so now you're going to put this on -- what is this called? >> a plate. >> jimmy: this is a plate. >> we'll do it right here which -- >> jimmy: on the cutting board. this is one of your things you do. you put the herbs and the olive oil on the cutting board and a lot of people once they finish the beef will just put it right
12:56 am
on the plate. >> tends to dry and goes cold quick. another way of developing flavor. anybody can do it. you see how we split the bones. >> jimmy: looks like it's running away from us as we try to eat it. slice into it. no now while you're slicing it a little bit here, a little bit just rare and you just -- >> put that back on there. >> jimmy: nice, i would eat it just rare. >> all right, i'll leave it for you. >> jimmy: i'm like a dog. >> then right there so the key thing on this, when you have the top portion. and you cut those pieces. as you cut them, you just flip it right into the dressing. >> jimmy: dressing on every night. what do you think of that, guillermo? >> i want to try it. >> that's a big piece. >> jimmy: do you usually eat
12:57 am
with your hands or use utensils. >> at home i use utensils. >> jimmy: you use utensils. what do you think, guillermo? >> guillermo: it's great, i like it. >> jimmy: cut me off a nice piece. and i will try it. oh, it's fantastically delicious. >> it's great. >> jimmy: it's delicious. this is made out of a cow, right? get a cow and do it. the book, a great item for father's day or, you know, if you don't have a father, you're sitting home alone sadly this is a book you could read. it's called "charred "charred & scruffed." find his recipe on our website jimmykimmellive." chef adam perry lang. right back with fun. elelelelelel
