♪ [ cheers and applause ] welcome back to "the chew." florida is famous for many things -- white sandy beaches, sunshine, walt disney world, and of course, citrus. and if you're not the most confident in the kitchen getting a grip on the basics by learning a few simple techniques is a surefire way to feel like a pro in no time. so i'm going to show you some great florida citrus tips usg oranges, grapefruits, and limes. oh, my! say it with me -- >> all: oranges and grapefruits and limes, oh, my! >> see that's the first -- >> audience: oranges and grapes -- >> all: oh, my! >> look what you've started. they can't stop. i know, i know.

you're like pros already. all right, you guys. so, my first tip is how to properly segment your citrus. so the first thing that you're going to do is cut off the top -- the top. so you see some flesh and the bottom. okay, just like that using a serrated knife is perfect. then, with the middle of your knife, you're going go down -- kind of the -- the curve the fruit. and th, what i do, i always look at this line here, the line there, and i'm following that line so that i don't end up with a squarerapefruit or orange. so you do that. you finish it. and see how it looks -- it looks round? >> yeah. >> all right, and then you obviously finish this, but the other thing that i do -- you want to make sure that you are doing your segments over a bowl because you want to catch that juice. so i cut on one side, and then the other side, i just flip it off. so, cut on one side. that way, i have -- >> flippin' it off. >> flip it off. oh. [ laughter ] all right. can you keep cutting? >> i can, i can.

>> all right, so, mario's going to finish that. next, i'm going to use the same citrus in a beautiful tangy vinaigrette because you guys know that always say i love a good pucker. we're gonna use -- right? we're nna use a standard three-to-one ratio for the vinaigrette. the parts oil, one part acid. so here, i have grilled my citrus, so i have the grapefruit. 'cause this makes it really sweet. squeezin' the grapefruit in here. michael,f you'll -- yep, let's squeeze it in there. and so i have a mix. i've got the grapefruit, the oranges, and the limes -- >> oh, my. >> oh, my. i know. in here, i have some ginger. i'm going to put in rosemary and tarragon. i have some shallots. and then i have in here some oranges. and while i'm making the vinaigrette -- hey, clinton. >> yes. >> over there, i've got those -- or mario. >> yeah. >> i've got the onions and i have some avocados. >> y. >> and i got some more of the more citrus. if you can put those in this juice and everything. >> yeah. >> 'cause when you're putting

your onions in youvinegar or your citrus juice, it actually takes some of that raw taste of the onion out, so make sure you do that before you put everything together. >> would you season it right now with salt? >> yeah, go ahead and season it. >> good idea. >> so, into this -- he was just asking just to make sure i was on point. >> i knew you were. i knew you were. >> i have some mustard in here, and then i'm going to put in a little bit of honey. and you put salt in there already? >> yes, ma'am. >> all right. we're going whisk and michael's going to add the oil. so it's three parts oil. and if you're making this, you may as well make it a lot because you're going to be using it all week. look at the wind blowing. >> feels like there's a storm brewing, carla. >> all right, so, uh -- >> and the rest of the segments -- >> perct! and the rest of the segment, yep. >> so like this is already lunch for me. i mean, we're good. >> right? that's looking good. so let me have some of that. clinton, you have the greens down here. i'm going to add a little bit of that dressing to that kale. go ahe and mix that up if you

can. massage it if you want. michael, if you go down to the other end, take this dreing and put on your -- those other greens. you have mixed this up. let's taste it, mario. let's see where we are and if we like it. you seasoned that beautifully. >> i learned from the best carla, you. >> okay.
