pops of color to life, and it's really about creating a look that's a little bit more approachable and homey, rather than super formal. and again, kind of going back to family style being a really big format these days, this is kind of the setting that people are really looking for. they want platters of food to be shared, people to feel like they're sitting down at your dining table and sharing a meal with you. >> all right. well, i imagine with all these style changes that the food has also changed? >> yes. >> absolutely. >> and you've got some samples for us? >> we do, absolutely. >> let's go sample. >> [ laughs ] so, this is actually one of my favorites. this is actually champagne jelly. it has a little bit of mandarin consommé, some fresh pomegranate, and actually edible flowers. >> and then what do we have over here? >> so, this is something that we would do for a first course that's not your traditional salad. this is a plate that we call "to crudo or not." >> [ laughs ] >> so, it's salmon prepared two different ways. the first one that we have is the crudo. it's on a bed of mango puree, a little bit of asian pear, some
