okay. okay. time now for a father's day treat. when you fire up the grill tomorrow, spice up your feast with homemade hot sauce. chef david rose is showing us how it's done. david, good morning to you, sir. >> good morning to you, and good morning to america. how are you guys doing today? >> we're doing great. >> great. >> i'm a little scared of this hot sauce. >> don't be scared. i'll be gentle, i promise. >> all right. tell us a little about what you have for us today. >> all right. so what we have today is a homemade hot sauce recipe, and it's going to be a pineapple habanero hot sauce. father's day is tomorrow. so we're adding a little bit of fire to the grill and going to spice it up also with a bonus hot sauce for those with a mier in front of you, you have an assortment of veggies for a taste test that will pair well with either hot sauce, so i got you covered. >> we're looking at this in

front of us and see the spicy and the mild but show us how to bring the fire. walk us through it. >> yes, what you want to do is the pineapple, of courpiapple, l it till you get some nice grill marks on there. what that will do is caramelize the pineapple and bring out the natural sugars in it, providing a nice, sweet kind of taste to the hot sauce. next, you want to blister off some habanero peppers. that's going to give you a nice little smoky note that i love in a hot sauce. from there, you want to also have your ingredients, you want to have ginger, rice wine vinegar, apple cider vinegar, sugar, salt and a little bit of lime but you won't add the lime till the end. so first thingfi have you guys dig in, jump in, get started and taste, and let me know what sauce you like best. >> oh, yeah. >> eva is already struggling. >> i'm loving the spicy, all in on the spicy. >> the spicy is like hot on the tip of your tongue right ay.
8:45 am
>> yh. yo here with the spicy. >> the pineapple helps you. all right, the mild i think you'll be good with the mild. put it into your food processor. >> i'm waiting on the pineapple. >> i'm outside and using my kitchenaid food chopper. my kitchenaid cordless food chopper so it's great, so everything in here like so, okay, and then you want to blend everything together until it's a nice pureed consistency. all right. from there dump the contents into ray sauce pot. you bring it up to a boil and bring it to a simmer, let it hang out for 15 minutes and let the flavors meld together. from there you strain it with a sieve or a fine strainer, and here, but make sure to reserve about a tablespoon of that pulp. that pulp is going to add nice consistency and flavor. so to that i add that, a little bit of lime juice.
8:46 am
that lime juice gives it a nice acidity and nice just like that, an amazing hot sauce for dad. it's sweet, spice, everything nice and delicious. oh. guys, what do you think? >> loving it. i'm in on the spicy. >> he just put the whole spoon in. >> yep. >> i'm jamaican, so i love spice and if you want to make a milder hot sauce, you want to make it milder, instead of six habaneros, use only one and a bell pepper and grill it the same way. it will be nice and mild and will take it easy on your taste buds. i love spice. i hope you lov icor mild, alk to me, guywhich o? >> i'm feeling it. >> we love you. we love you, and i vote for mild personally, but i'm a wimp. i didn't even try the hot. i saw what happened to eva, and i was like, peace. >> when he ran the blender, i wasn't sure if it was the blender or eva squealing. >> yes. it could have been both.
