optimism. >> i had offered up optimism as a panacea. i tried to be sincere. i was sincere when i spoke about how i felt about it but i thought i now understood that under certain circumstances it could seem glib because people's pain, it's hard to measure against anyone else's because we all have our own. on the misery index mine was a 1 compared to the loss of loved one or loss of a child, loss of a job, loss of a home, loss of a country and loss of the future. i mean, i just had a broken arm. >> you know that so many people look at you every day and say, boy, you're the one who is going through the hard time. >> well, we all go through hard times. a football player said something being interviewed said, i don't know a person who hasn't been through something. and i thought, wow, that's really true. i don't know a good person who hasn't been through something. we all went through something this year, but with gratitude and optimism. >> you also got pulled into watching a lot of tv. >> just game shows and i watched a lot of westerns from the '50s.

serve our food. we're trying to keep people busy. virgil's, the name is there, the reputation there and trying to keep it alive until it gets busy again. >> bless your heart. thank you for today because thanksgiving is coming up. i'm a southern girl. >> yep. >> you know i love my southern dishes. gravy, gravy is something that will be on the thanksgiving table. what's the deal with gravy? >> gravy is the finishing touch to your thanksgiving dinner. it basically brings everything together. people like to put gravy on their turkey or chicken fried steak like we have. but where is it with stuffing and mashed potatoes? add it to everything. >> tell me the secret. >> the secret to this -- this is a white gravy so a country, southern country gravy. we use chicken stock and cream, we use sausage so i'll give you a little -- let's do it. you have everything. i have everything. so start with the oil. we have the pan preheated so be careful. >> whoo. >> put your sausage in. >> got it. >> put your onions in. >> onions in. >> use your tongs, stir it up a little, let it cook for a couple

of minutes. >> she's hot. coming in hot. coming in hot, glenn. >> lower it down a little, but it's nice. you want to smoke this stuff. >> then what? what do we do next? >> next add the herbs in. >> got it. >> we have seasoning and herbs. let's mix that in a little bit. all right, then the big secret to make the sauce thick is to get in a roux. >> that's my problem. i can never make it thick enough. >> the butter, put the butter in first so that's your part of the roux and let it melt. only about a minute. stir it around, it will melt quicker. >> la-dee-da. >> perfect. perfect. as soon as the butter melts, add your flour in. >> as soon as it melts? >> yes. stir it up. stir it up. >> i can stir it up. i can stir it up. >> good to know. all right. so the trick here is the color of the gravy. if you want gravy to be white only cook it for three to four

minutes. brown gravy, cook it eight minutes so the roux turns brown. that's the trick of getting it nice and colorful and the right color. mix it in and cook it out for a minute so the flour cooks out and then you're going to add your liquids in. cream, chicken stock, right. cheers. >> cheers to chicken stock. >> beautiful. >> i didn't know that about the coloring. it's how long you cook it. okay. >> absolutely and the other thing is to make sure you're cooking it out. let's switch to this and a whip. >> whip it real good. >> we're going to see it finishes off thickening as you cook. we don't want it too thin. we don't want it too thick. so we put in the right amount of flour, which is almost equal to the butter. then if it comes out where it's

getting too thick, just add a little more cream or stock. you may want to add the seasoning. if it's too thin, the big trick, reduce it down a little more and it thickens as it reduces but then there's something we have as another trick, cornstarch and water, bring it up to a boil and thickens it almost instantaneously. >> i love these hacks. okay. so we got the gravy going. >> the gravy is going. we'll let it boil. >> now the chicken fried steak. everybody wants turkey for thanksgiving. >> not always. especially now when you have only a few people. this is one of our specials. that's what we're showing today. chicken fried steak, you can use many pieces of steak. we used brisket here. sometimes we use rib eye. make sure it's pounded really, really flat. cut on the bias, pounded flat. all right. >> your trick is -- >> tenderize. >> your trick is the breading? >> three cs. it's crackers, chips and cornflakes.

potato chips give it so much flavor. cornflakes. dip it quick if the flour, all right, make sure you shake it out, make sure you cover everything, all right. take your tongs again since we're not using it anymore, right. coat it with the egg, coat it with the flour. pick it up. right into the crumbs. all right. >> give the three cs again. >> chips, crackers and cornflakes. >> wow. >> all right. press it in. press it in. you want a lot on there. press that baby. >> i'm just loving my gravy. i can't believe how it's getting so thick. >> it thickens up so quick. >> how long do you cook it? >> this or the steak? >> the steak? >> the steak only took like two, three minutes on each side, a little bit of boil in the pan. the gravy only takes five minutes to make. if you look at that. it's thick already and the flavor is in. it's ready to serve. >> let's -- because we -- because michael said to make a plate. so we sent a plate over to everybody. >> he couldn't walk over here?

"big sky," it's a drama unlike any we've seen on abc. don't want to give too much away. how would you each describe your reaction to the first episode? >> man, i was shocked. i think that the audience will be and it leaves you wanting more and leaves you needing answers. that's for sure. >> is that you, ryan? >> it's somebody. >> you rang. somebody is getting a call. >> sorry about that. >> so, kylie, what was your reaction? >> i was shocked as well and really excited that abc is

taking a chance like this. >> katherine, what about you? >> i feel the same way. i was just literally shocked when i read the first episode. it was just like, what? this is not happening. but i think a lot of people are just going to be on the edge of their seat because this is introducing such incredible characters that are a little quirky and weird and unexpected, so even though there's a lot of intense drama throughout the entire thing, but there's also a lot of people are going to stay for the characters. they'll try to figure them out and dive in and really be really intrigued about who she's people are. >> well, we know the show is filmed during the pandemic. of course, safety measures were in place but what was that like between takes, ryan? >> we were one of the first major productions to go back to work so there was an element of finding our way through this new world and embracing these guidelines and protocols. you know, the crew was fully in ppe. we were tested almost every

other day in the beginning. but once you actually got on set opposite your fellow actor and got into the scene it felt relatively normal but i would say the social aspect of making a television show kind of -- it wasn't what you're used to. >> and i want to say your three characters, they find themselves in the middle of a pretty messy love triangle. who doesn't love that? so we'll take a look right now at the premiere. let's check it out. >> are you sleeping with my husband? >> whoa. whoa. >> that's not exactly a denial, is it? >> you've been in my home. >> jenny. >> excuse me, denise, i'm talking to cassie. had supper at my table. >> first of all, you two are over. >> is that what he said? >> you said. >> where is cody anyway? >> sounds like you have a little situation there. i love it. so much girl power on this show.

so, katherine, what was that dynamic like behind the scenes? >> it was pretty amazing truthfully. like coming off the show for seven years on "vikings" got a chance to play a strong, formidable character, something new to get on a new tv series especially right away. but when i read this and reading cassie's character and jenny's character, it's so unique to have two strong powerful women on screen that are completely polar opposites but yet have a common goal and somewhat of a kinship because obviously there is a love triangle involved but also a lot of respect for each other as independent and strong as they are, there's love there as well. >> and, kylie, we know you connected to your character on a personal level. can you tell us about that? >> yeah. i always think that it's a privilege to be able to play what you understand and cassie is a biracial woman in a very white environment and that's how
