>> we are a local chocolate factory. a chocolate maker, which means that we go and get the beans from origin, we bring them to san francisco and we roast them into them into chocolate. other chocolate companies who start with chocolate and make it, we get the beans, we add sugar, there is no pure expression of a chocolate bar than what we have and we send samples of bars that are 70% with only two ingredients and the different origins, ecuador, india, at a gas card all have their unique flavor. kristen: you give a story of where it comes from and what the properties are. spencer is a wine connoisseur so he is telling us about what to look for, whether it is not enough -- 90, blueberry, tells of the flavors. >> you can think of our chocolate like wine.

chocolate can have more flavor complexity than wine or coffee, but for the last 50 years those were considered to be mistakes. traditional commodity chocolate you get beans, you essentially burn them and you get one monotone flavor. it is a miracle of industrialization that hershey's bar taste the same any part of the world, but we do it differently. get beans with amazing genetics, we work with the farms with good labor practices, we source the beans, we do taste tests today -- to figure out how to get the flavor out, and ecuadorian art might be chocolatey, madagascar might be nutty, you might get muddy -- fruity or floral. larry: i have friends in the chocolate business in their observation was however much money you think it's going to take to launch this chocolate business, you don't have enough.

because it is complicated. what made you want to launch dandelion? >> we consider ourse a american chocolate movement now worldwide. when we started, there were only 10 other copies in america making chocolate from the bean and now there's over 200 if you look at craft beer, there were a few people and it exploded, craft chocolate is exploding in america, going back to europe. europe has always had a monopoly on good chocolate, the american style has gone to europe and we wanted to see if it was possible to make great chocolate. started in a garage for fun and then we started winning awards and now we consider what happened to coffee, i remember when starbucks came to my town it was a revelation, all of the wristers. in the chocolate world we are in the dutch roasters. in the chocolate world we are early, we are pushing forward.
