and they have a new anniversary cook book out to celebrate the milestone. yep, the chief content offer, dan and eric are both here to share tips for a stress-free and delicious thanksgiving dinner. welcome, and good morning. >> good to be here. >> whit: we will talk turkey first, you have an easier roast turkey. what makes it easier. >> guest: we have tested 25 years for turkeys, and this is easier. i have the roasting pan. i put it on top of a baking stone. so this is what you use to make pizza, traps the heat and pump its into the dark meat so it will cook the same as the white meat solving problems and no mess or fuss to it. the next tip is to make a foil shield for the breasts. we have had dried out white meat, this will solve that. you pop this guy on here comes goes into the oven, reflects some of the heat. >> whit: only in that

section. >> guest: only in that section, put it on top there, big heat from the bottom, less on top, and the whole thing cooks at the same rate, finishes nice and juicy. >> rebecca: do you take it off during the cooking? >> for 30 minutes and then it browns beautifully. i have i beautifully browned one over here, absolutely gorgeous by the time it's done, we figured out the math and science on this one. >> whit: people use therm >> no, i love thermometers. we have a few tips, if it has a pop-up timer, ignore that pop up part. >> oh, that's the one you don't like. >> those are set to go off as 178 degrees, way too hot for the breasts. and you want a fast digital instant read thermometer, go

into the thickest part of the breast, check it there and also into the thigh. [ audience oohs ] >> guest: looking for 155-170 >> that's critical. >> the carving? >> whit: you have a special technique for the carving? >> fresh. . >> guest: this adds a flair, you have beautiful leavey, sage, parsley thyme, wonderful thanksgiving flavors and you slice the turkey right on it. you end up cutting up the and the juices from the turkey flow into it, and basically, you make a gorgeous dressing on your board. so when you platter it up ... >> how did you figure this out? >> we do a lot of testing in the america's test kitchen. we play with recipes, a lot! as you bring it over, the come with it, and the juices combine. good turkey, right? >> perfect. perfect. >> rebecca: i am seeing

cheese cloths everywhere on social media. is that a thing? >> guest: it is, we tested this, you see cheese cloth draped over the bird, what it does is traps the moisture, slows down the breast, like the shield here, but the plus-up from that, cheese cloths were soaked in water. and, you can see we used a little bit of bacon. >> now we are talking! [ laughter ] >> yeah. >> so -- >> this is what upgrades it. >> this approach works awesome. drape this wet cheesecloth over the top, and ash low the pork to render and crisp and add so much flavor to the turkey. allow and moving over to the gravy. >> whit: you have that one, erica, hacks to make it perfect? >> guest: i love to use the turkey drippings in the gravy to add flavor and the secret ingredient is soy sauce. >> really? >> guest: great way to add

savory and adds color. no need to sweat lumpy gravy, i strain it through a fine fresh strainer. can you hold that? thank you so much. no lumpy gravy, it has happened to all of us at some point in time. you strain it right on through, easy-peasey. and now have a nice and fool proof gravy. >> whit: talking about gravy boats. the popular gravy boats? >> what about the gravy . the gravy can get cold. there's an alternate for that? >> guest: gravy boats are stunning, but when you want seconds or thirds, what happens? you need to take that gravy and pour it into an insulated caraf, or mug easy-peasey, whenever anyone wants more gravy it will be hot, fresh, delicious. and, if you happen to have a gravy that's too thin, we have

back with dan and acra >> whit: back with dan and erica, we have great ideas to level up the holiday diner and now it's time for what so many people believe is the best part of the meal. the sides. we start with brussel sprouts. i thought you had to cook them, but there's a different way to prepare them? >> guest: we will look at ways to change up the sides so they are traditional but fresher. slice the prus

>> brussel sprouts i have plumped apricots and shallots. this is the base of the vinaigrettes, with toasted nuts. this is a warm mustar vinaigrette. that's key, mustard you put this on greens and it will wilt them just a bit. you would not want to do this on a leafy green salad, good for these guys, though. and, toss it up here, you want to help me finish this? >> ricotta salada, we put that on top, and watercress, adding a peppery fresh bite to it. beautiful. gorgeous, shows up on the table and everyone is so welcomed, because of the rest of the meal is soft, this is crunchy and delicious. >> man, looks good. >> now you don't have to cook them and now the house doesn't sound like brussel sprouts.

i asked my 5-year-old, what she wanted she says macaroni and cheese, you have a 20-minute version. >> guest: creamy mac and cheese, good old fashioned american cheese makes this creamy and delicious, balanced it out with extra-sharp cheddar, and this is the panko and butter topping. you add in the parmesan cheese. stir together and season it up with a little salt. a little pepper in there, too. and, then ... take some of that delicious panko-topping and sprink teleright on top. so you get all of the deliciousness from a baked mac & cheese but with in 20 minutes. sprinkle that on top no oven needed. easy-peasey. >> dan, we will level up the

mashed potatoes? >> guest: this is a sacret dish, we are using the same ingredients, buter and milk. sacred we are browning the butter, i don't know if you can smell the nuttiness, incredible. you cook the butter over the medium-low heat, until you see the beautiful flecks of brown here, we have that in the potatoes and then we finish it, it will smell amazing and you drizzle that over the top. at the table, and people go ooh and ah, and love it. classic mashed potatoes with a beautiful twist on it. >> whit: i have been trying the butternut squash. >> guest: we have the browned butter and we have crunchy roasted hazel nuts, and we finish it off with lemon juice. let's let that sizzle. water. just stir that all together. and then i will spoon it right on over ... beautiful .

>> cinnamon. >> if you haven't made your whipped cream, thanksgiving day, orange zest is a game can-changer. >> rebecca: this is after you make the whipped cream, not while blending it up. >> guest: you got it. exactly right. >> ready to eat right now. >> well, let me know what you think? all right! awesome . >> what about the cranberries here, we have the left over cranberries. do you have a festive way to use them? >> guest: then an ultimate show-stopper dessert, something you have not had for the holidays. i cooked the cranberries in sugar-syrup, so it makes them a bit sweeter and they have a nice sticky coating. i drop them into granulated sugar here. and, you make sure there's enough sugar in the bowl. [ laughter ] >> gio: making sure. >> guest: you get absolutely

gorgeous looking jewels. so beautiful. and they are a key part of this gorgeous dish. we planned this out, so, i will steal the whipped cream. so this is a merangue crust, crunchy and chewy. mound the whipped cream on top, and then there's a mixture of oranges and cranberries, seasonal fruits, the stuff that's beautiful right now. and we just lay this on top. >> beautiful. >> guest: balances the sweetness. >> guest: there's a bit of mint in there, as well. and then we take the sugared cranberries and these are the garnishes. razzle dazzle on top. this can be made entirely ahead really, really easy. no one's seen this on the holiday table, they will be wowed by it. >> rebecca: you have something at the end year gio that you don't have to bake, a no-bake dessert? >> guest: getting easier as we go, no-bake. six ingredient no-bake fudgey
