okay turn left. ....where getting lost is part of the fun. everybody knows about wine caves that wineries have just a typical guy like me can build one in his backyard. we're snooping around a handcrafted backyard cellar. sparkling wine can be wonderful. sparkling wine can be delightful. plus, bubbly essentials on sparkling wine and champagne. bringing this lifestyle into your own home, all now in wine country. i'm mary babbitt. many of us dream of living and working in wine country - but how about actually

setting up shop in the middle of a vineyard? we're at the home studio of artist lynn mahon, he's a sonoma county potter who works here in the grape vines. we'll get to know lynn and show you his work a little later in our show. but first, let's meet a sonoma county couple who also work among the vines. when luke porter launched porter-bass winery, he and his wife moved into a gypsy wagon in the middle of their vineyard. talk about roughing it.they don't even have plumbing. behind the label, what it takes to get a fledgling wine brand up and running.and keep it going. starting a new winery may seem exciting and fun, but when you get right down to it, it's a lot of hard work and sacrifice. would you take like this one off? yeah. just ask luke and elena bass. as a young couple starting our own business, we had to sort of prioritize our expenditures. so, everything

goes to the winery. their "porter bass" winery here in california's sonoma county has no tasting room, nor a gift shop. just acres and acres of grapevine, and young founders willing to give up, well, quite a lot. we were both working good jobs at wineries and uh we've decided to do the brand and needed to cut the budget. and we said hey we can move into the gypsy wagon! the "gypsy wagon" is an old trailer in the middle of the vineyard. it's seventeen feet long, eight feet wide, and it's now luke and elena's home. we've lived in some small apartments but this is very small. they've got a built-in bed, a chest and a chair. with so little space, there's really no room to spare. we try to keep it pretty clean and simple, since it is such a tiny little

space. it gets cluttered really fast. especially with the dog - she takes up a lot of room. their only luxury is electricity. an extension cord runs from a nearby building to power their one and only light. but if you need to make a phone call in the middle of the night or use the restroom, it's a 300-foot walk up the path to the house. want to go get some lunch? truth be told, luke and elena have a fall back in luke's parents. they live up the hill, giving the young couple a place to go for the comforts of a regular home. the basses are a wine loving family. mom and dad own the vineyards and help out with the winery. but they say the winemaking is entirely up to luke and elena. i haven't the palette to make wine. luke and elena have a very neat combo of palettes. they're not identical. they're very good

critics of the wine they're making. dirck bass is an architect. he built the gypsy wagon in 19-70 in upstate new york, when luke was just a boy. it was built with a tow hitch. i put it onto a rental truck. put all of our possessions in the rental truck and pulled it out west. some might say this lifestyle's inconvenient, more of a hassle than it's worth. but if you ask luke and elena, living in a trailer in the middle of a vineyard really does have its perks. it's about quality of life. by living in the wagon i don't have to get a second job to pay the rent or to pay the mortgage. and elena can do the work she loves... it's really gotten me way more in touch much with what's happening in the vineyard and the cycles of the vineyard. ...so it really just allows us the opportunity to live the life we want. if the winery turns a profit, luke and elena might consider moving out of the old wagon. in the meantime, they're hard at work in the vineyards,

when it comes to collecting wine...some people store their best bottles in a rack, refrigerator or better yet a wine cellar. but we met a landscape contractor who's combined his love of mother nature and wine to create a storage solution all his own. hi, i'm steve rudy welcome to my el cerrito cellar. let me show you around. most wine cellars do the job -- storing wine and such, but when steve built his cellar... it's a little secret hideout. he didn't know his project would turn into a backyard retreat. before we started it was basically dirt, weeds and basically behind the garage area where we threw junk. steve created an above ground "cave." my favorite part about the cellar is

probably the entry. it's probably what i put most of my time into designing and trying to create a sense of oldness. i tried to find a door that looked old and what i wanted, but couldn't find it, so i ended up just making it myself. when you walk up you'll see the travertine paving, which is outside the cave and also inside the cave. the columns are made out of terra- cotta flue titles which are used in chimneys. the structure of the cave is basically concrete. steve's cave is now part of the landscape. you see banana plants, morning glory is basically on the top of it growing everywhere, a mexican fan palm, some cannas, some various ferns, there's a little creepy ground cover called bacopa, there's a trumpet plant uh called datura . inside, a change of scenery. i've collected about four hundred bottles so far. i have one special bottle that i bought in italy. it's a 97

must is the name used by winemakers for the unfermented liquid consisting of grape juice, stem fragements, grape skins, seeds and pulp. the mixture comes out of the crusher- destemmer, at the beginning of the winemaking process. the term is used until the end of fermentation and that's when the must becomes wine. you know we've gotta say it -- consider this your pop quiz that was a must must is something you learn about when studying the basics of winemaking. we thought we'd extend the lesson plan today. but we want to keep it fun so we're going to look at the basics of bubbly. from champagne to sparkling, sweet to dry, vintage to non-vintage, master sommelier evan goldstein has the essentials of bubbles 101. all champagne is sparkling wine or bubbly. not all sparkling wine or bubbly is champagne. by law champagne

must come from.well champagne. champagne is actually a place. it's northeastern france about 90 miles outside of paris everything else with bubbles? it's sparkling wine. sparkling wine can be extraordinary and it comes from fferent places in the world. in the united states -- you'll find sparkling wine. "cava" is from spain cava is both the name of the wine as well as the name of the region which is located in catalunya not far from barcelona they are extraordinary represent great value for the money in italy, it's asti spumanti . coming from the town of asti in the piedmont region and also prosecco. prosecco is again the name of both the area and the grape that it's made from the style of bubbly also matters. "brut" means the wine has less sugar and is dry. "demi sec" means the wine is a little sweeter. some sparkling

wines and champagnes have a vintage date on the label. but most do not. the lion's share of all sparkling wine and champagnes that are made in the world are what they call a non- vintage or increasingly popular terminology multi- vintage wine. wines from older vintages are blended in to make a consistent wine year in and year out. as a general rule it's going to be more expensive to find a vintage wines because simply they are rarer they are not made quite as often. however it doesn't necessarily mean that you as a wine drinker are going to like it better or that in fact this wine is actually better than the non-vintage wine. what it simply means is there is something unique to the year it was harvested. and that's the essentials of bubbly. artists often get inspiration from their surroundings. for sonoma valley potter lynn mahon, the source of creativity he draws upon is the land and vineyards surrounding his wine country studio. come along as we visit lynn's outdoor gallery and see the

potter himself in action. my studio is set in the middle of thirty acres of vineyards. i'm on the border of napa and sonoma counties. so, my studio is in napa county. my mailbox is in sonoma county. lynn mahon's the artist in residence at latour vineyards. while his location among the vines may seem picture perfect, the art he's making here is, by his own account, anything but. there's a tendency with ceramic artists that they want to make perfect vessels. they want everything. they want things to match up. they want to be recognized for the same things. where i really like to undo things. i like to, to make them so you can't. i mean you'll recognize that it's mine because it looks so crazy. and it's so chaotic. i, i add chaos to the perfect pot. a quick peek around lynn's studio confirms it -- this guy's

art is free form, not unlike nature around it. and occasionally, downright dinged up. i'll make a perfect vase and then i un-make it by messing it up. so tell me about this piece? dad's sixtieth birthday. and it's a fountain. there will be a tube of water that will shoot down into this bowl here and it'll drain out the floor. it's a self portrait -- can you see the likeness? this is the likeness right here. thank you very much. sure. and yours? i don't want to clean mine. i might loose my mojo or something. lynn's art may be chaotic and messy, but his pottery skills are professional and polished. which is more

we're always on the lookout for something new and different to do in wine country. well we found an activity that the whole family can enjoy, but it might keep your kids and you busy for a long time. take a real adventure in wine country, where getting lost is all part of the fun. woo hoo we turn here. it's a circle. it's a big ol circle! that way. that way it's south. these kids may be finding a million ways through this maze, but there's only one way out. they can run laps around this thing i think all day long and still not be tired. farmer john gandolfo is happy to oblige. once a year, he opens his "g and m farms corn maze" east of san francisco -- in the

livermore valley wine country -- to hoards of crazed kids and their parents. you're surrounded by eight, ten foot stalks of corn. so you lose your sense of direction very easily. they're having a field day exploring six acres of corn. it's a dead end this maze is only one of hundreds that open across the country each year. this one looks like a quarter, thanks to a corn maze expert who carves out the design months ahead of time. he sets this field into grids by using the rows that we plant on and then he flags it out. gets it all marked. and then he comes in and actually kills the corn with round up when it's about two inches tall. so it's already done basically when this corn is two, three inches out of the ground. they even install a bridge... which later becomes a big hit with the kids. this is cool! wow! how'd they get under there? for those who get hopelessly turned

around, help is on hand. dan marciel is a partner in the farm who also plays "corn cop." they're completely lost. they don't know where they're at or what they're doing sometimes. there is a kernel of truth to that, but actually most folks don't need assistance. you see, the maze is peppered with hints. how old does a boy have to be to become a boy scout? six! turn left! answer just one trivia question correctly -- on history, pop culture, the bible or another topic -- and get sent off in the right direction. it'll get you from one end to the other if you read the questions and follow the directions. we're going to take the wrong way -- turn left! hut two, three, four. hut two, three, four. having explored the field far and wide, the kids finally approach the end. it's been taking them about thirty to forty-five minutes. yeah yeah yeah! an adventure getting lost in wine country, where finding

products like olive oil, chocolate, and honey are all foods that express the places where they're made. well cheese is no exception, and it's certainly is a natural pairing with wine. we're at the harley farms goat dairy in pescadero just north of santa cruz. here, you can discover homegrown goat cheese made daily that's as fresh as a flower. look, aren't they gorgeous? perhaps you've heard the ol' saying "get your goat." well, dee harley's got her goat. she's got lots of goats in fact. it'll probably fall asleep in your arms, they love attention. they're just like a little dog or something. dee's the owner of harley farms goat dairy. more than two hundred forty of her goats graze pasture here in pescadero -- including, during our visit, a herd of kids. but that's not all. there's also bart, the guard llama. yes that's right, he's a guard llama. he just loves his

babies. aww. oh this one's going... oh no! yeah. i know. he's gonna climb right up . it's like, "i'm just a little play toy, look!" bart's here to fend off coyotes and bobcats. animals that otherwise, might fancy a little goat snack. he'll comes right up and he's got these teeth that stick out. but he just wants to check you out and make sure that you're ok to go in with his animals. the goats in bart's care are a productive bunch. twice a day, they file into the farm's nearly one hundred year old pen for milking. imagine it's like a valve and you have to shut the valve up top. farm manager wil edwards leads tours and teaches folks how to milk goats. be very firm. very good. that was good. truth be told, hand milking is udderly impossible with so many goats. milking machines are one of the few

concessions to modern-day farming. we milk the goats by machine now because we have so many. the milk, gets filtered and goes into a cooling tent where it's cooled immediately. and then we pasteurize it that day. i'm ready for my close up. alright. good to go? so now we're ready to go into the dairy part. harley farms is one of only a handful of dairies in the u.s. undertaking every aspect of the cheese making process, including of course making the cheese itself. we're a farmstead dairy, which means we have our own animals and produce our own milk that produces our own cheese. the cheese they're making today is a product called "monet" -- one of their signature goat cheeses, topped by hand with edible flowers. i feel like i'm all thumbs here. well they're very delicate these little petals like that. harley farms may be a small, labor intensive operation, but its homegrown cheeses are winning awards and accolades. are you ready? oh

because it gives us a chance to you know to be a little different than everybody else. so we can feature the wines, we can customers, we can really you know shine a light on them where other larger venues can't do that. you can discover wines you might not get to sample anywhere else. there you go. enjoy! i like the small wineries trying to find something new. and they keep bringing in wineries that you maybe haven't heard of that you could get to try. the grapevine's special winemaker tastings are packed with... wine education, wine enthusiasm and enjoyment. so, we can really educate people about what they're putting in their mouths. so you walk out of here with a bottle of wine that has a story wine isn't the only thing that brings in the crowd... at every event we do on thursday nights we pair the cheeses with the wine - we try to pick cheese that will go nicely with the wines we're having. and when consumers know a good wine... we've got a number of wineries that we introduced here that we just can't keep their wines on the shelf

everything italian. we like the furniture, the music, the people, the wine. so our vision was to have a italian home with a wine theme. collaborating with designer jacques saint dizier owner, nancy colella's dream renovation erased the outdated, and recreated a wine country retreat. it hadn't been updated for a very long time. part of the fun of this house is the fact that when you walked through the door, there's no way to know what's coming. we started with two arches and somehow they just kept multiplying. one of main features of the gallery is the contrast between the floor which is travertine, tumble travertine and partially filled and this smooth wall finish which has a sheen to it. jacques says lighting is a key element in creating this

warm, inviting living space. every other bay has a skylight. the series of arches then leads you to another gallery and off of this gallery is the grand staircase that we created, this travertine staircare with an obosone tapestry that dates back to 1780, and a pair of panels that are painted from about the same period. the staircase has iron railing. it was all hand worked. one trick for creating wine country in your home...let your travels be your guide . we brought things in san gemiono and florence. we went to a wonderful cooking school outside of pizza and it was the tuscany region and we brought some things back from there. topping off this wine country haven, jacques created a small space with big

appeal the powder room which is the only room in the house that we did as a surprise to the clients. it's done as a little jewel box actually. it's back painted mirror that's been antiqued with a vine growing all the way around the room and then mirror on the ceilings like a fixture. when you close it, it's completely sparkly and glamorous, it's like you are in the inside of a jewelry box. another way to bring wine country into your home? jacques suggests a rich wine colored paint like the one in this wine cellar. whether you choose faux marble, travertine flooring or a warm splash of paint, let the colors of in wine country be your inspiration. relaxing at home is one way to enjoy the wine country lifestyle. but for some of us, only a spa will do to get us in that tranquil state of mind.

we've discovered a wine country destination called osmosis where pampering means a dip in a cedar enzyme bath for soothing relaxation. when you think of a bath...think beyond warm water and bubbles. the cedar enzyme bath at osmosis spa in the sonoma county town of freestone gives new meaning to "bathing." in japan they had a tradition of drinking tea with enzymes and out that tradition stemmed the idea for the enzyme bath. so, we start out with the tea to provide some historical context. you sip tea and wander around the zen inspired garden. meanwhile bath attendent catherine stupar prepares your blanket of heat. it's henoki cedar, douglas fur and rice bran combined with enzymes that catalyze the fermentation of those fibers. first she rakes the mixture. when i'm digging in the bath

it's really to open up the material and let a lot of oxygen flow in there and make sure the heat is evenly distributed. soon it's time to step up to the bath and prepare to get covered. it's feels somewhat like be buried in the sand. but it's not quite as heavy. if you can imagine a mixture of peet moss and sand -- it's very light, but warm. you don't feel weight on top of you. you feel just like there's no gravity. you feel like you're floating. as the fermentation progresses you can feel the benefits of the treatment. that creates a lot of heat as a byproduct, you feeling ready for a cool cloth? which helps stimulate the metabolism and bring toxins out of the internal organs, so that you can leave detoxed and refreshed and relax and contemplate your own life and become one with yourself. after twenty minutes... i'd like you to lift your arms up to the surface. ...it's time to dig your way out. after the treatment one

"wine on the river" is a specialty trip combining fine wine tasting with raging white water... . we're taking an adventure in wine country down a class four river -- with a boat-load of wine in tow. this stretch of the tuolumne river in the sierra nevada foothills may be wild and remote, but a group of strangers has come together here for the utmost of civilized endeavors. wine tasting on the banks of the river. this trip here on the tuolumne is our tuolumne 'wine on the river' trip. it's the first of four wine trips that we do around north america. steve markle is with "oars" -- the outdoor adventure river specialists. they're the guides for this trip. layers of clothing are good. the fit is great, but i care more about

the water. of course, a "wine on the river" trip requires, well, wine. that's where scott klann from twisted oak winery comes in. i brought some barrel samples. we're going to have some fun tonight we're going to do what is called a blending seminar so i had to bring some barrel samples in order to do that. but first... we are all ready to get wet. we're going to go through some great rapids. they've gotta get down the river. these are "class four" rapids. that's four out of a possible six in difficulty. now, most adults can run class four rapids with a guide, but still, this is no walk in the park. it doesn't take long for the mighty tuolumne to flip a boat -- sending a handful of rafters, including scott the winemaker, into the drink. the boat turned over. it went up

and it flipped. is the wine still attached to the boat? the wine was not in our boat. the barrel samples i knew were ok too because they were in the boat that saved us. the barrel samples, the finished wine. you know, the food might be important, but uh it's, of course it's secondary. during the course of this two-day adventure, the rafters navigate fifteen rapids along a pristine river canyon. it's 18 miles of virtually nonstop whitewater, and completely removed from civilization. there is no other river in california that really takes you out of civilization the way the tuolumne does. this may be the wilderness, but camping with oars is hardly primitive. table cloths and hors d'oeuvres are de rigueur in this neck of the woods. there it is! the main event is, of course, the wine, which emerges from a dry box safe and sound.

here's what we're going to do. we're going to pair up into two different teams, and we're going to have a little blending fun. scott's blending seminar is a game -- a timed competition pitting two teams against each other. they've got three barrel samples and the tools of the winemaking trade. the object... mix up the better blend. i think no matter what you mix together, it's still going to taste really good. one team's blend is dubbed "miwok" -- a nod to the natives of the tuolumne river. the other, "cornucopia of chaos." a wisecrack, perhaps, about the day's whitewater adventure. i'm going to go judge these. you guys are going to have some more of your left over barrel samples. if this trip proves anything, it's that you can live high on the hog, even in the wilderness. these were both very good wines, alright but the best blend of the night was the miwok. woo hoo! an adventure with wine on the river -- escaping
