♪ this week we're celebrating moms and all the amazing things they do. and one of those mothers is cindy campbell. you're going to love her. >> cindy's son, ty, lost his battle with a rare and aggressive pediatric cancer in 2012 when he was just 5 years old. since then cindy and her husband, lou, have found a way to honor ty's memory. >> my mouth's not working.

can you feed me my lollipop? or my hand feels funny. can you do it for me? but he wasn't complaining. he just wanted to keep playing, manipulate the toy or show him something. he didn't get worked up over it. >> he was a wise guy, too. he loved nothing more than to tease people. especially us. >> this is a really big mess here. i wonder how we can get that mess cleaned. >> clean that up. abracadabra. clean that up. >> even though he was battling cancer, he talked about jumping in muddy puddles when he got better. and that's why we started the muddy puddles project because that was the epitome of childhood. and that is what ty was all about, laughing, having fun, being a kid. >> cindy and lou created muddy puddles project in conjunction with the ty lewis campbell foundation to raise money for pediatric cancer research and to encourage families to let their

kids just be kids. it's so nice to meet you. >> you are amazing, by the way, we have to say. finding the strength to start an organization like this, when you yourself are going through such fresh pain, how were you able to do that? >> well, as a parent, we went through such, you know, trials and tribulations. and through the whole cancer journey, we saw that the treatment options just weren't available to our son. and it was very frustrating. my husband and i were constantly researching. as you can imagine, you want to do everything you can to save your child. >> you will. >> and you will. we were always asking what can we do differently? what might work this time? let's try something, and it just wasn't available. so my husband and i decided that we were going to dedicate -- we knew then that we wanted to raise money to help support the research, the promise that's out there and help fund some of the projects and the clinical trials and, you know, the muddy puddles project was a great platform to do that. >> and it was just a rare disorder? not enough children suffered

from it in a way? >> the truth is, that's with any child with cancer with the exception of leukemia, there hasn't been much progress made because there's hundreds of different categories and thousands of rare tumors. so childhood cancer is lumped together as a whole but really it's fragmented into hundreds of types of cancer and studied as childhood cancer as opposed to kidney cancer or prostate cancer or breast cancer. >> i hear a little voice from over there. i think your other son is there. >> my son is here. he's 5. >> your dad -- your husband. >> my husband, lou. there he is. the two of you together, you and your husband, are really a force because a lot of times, i mean, it's hard, but marriages sometimes have difficulty making it through something so tough. it seems like it was the opposite for you guys. >> it was. it made us closer because we both felt so -- i mean, the love for ty is just so strong. and it really helped keep our family together through it all. >> he's a magical little guy. >> he's a magical little guy. >> you said you're forever changed. tell us about that. >> you know, i was a typical

working mom. i was stressed over work. i was stressed over dinner, bath, bed and pouring a glass of wine at the end of the day saying life is hard. this is exhausting. and it is on a daily basis. but now i'm forever changed in the sense that i always try to have that perspective, that hey, my son didn't have the chance to do, you know, the future that i thought he would have. and i always try to reflect on that and remind other parents to take a step back. and that's really what the muddy puddles project is all about, to remember let kids be kids because there's kids out there that can't. so, you know, try to always remember that and have that perspective. and those days are so fleeting. >> they sure are. >> days with your kids. >> thank you, cindy. you do so much for other families so we decided, if it's okay with you, we'd like to send you guys to orlando, florida. for four days, three nights. you'll have great hotel accommodations at the castle hotel, round-trip airfare. also included you'll have a two-day, two-park tickets at universal. you can enjoy the parks. just to take a little time for you and your family. >> that's so amazing! thank you so much!

it is time for "today's kitchen." how to stick to your diet and never feel hungry again. >> you could lose up to ten inches in four weeks. by supersizing your poritions it's all about eating the right foods. >> all right. here with ideas from her new book "the hungry girl diet" is lisa lillian. hey, girl. >> hi! >> is that true, you eat? >> sounds too good to be true. >> it is true. it's all about choosing the right foods. i've been doing this ten years, sending daily e-mails with tricks and tips and i've been super-sizing. this is the first actual weight-loss plan from the hungry girl brand and it's about eating more and losing a lot of weight. >> this looks very delicious and filling. there's a lot of egg going on there. how many calories? >> all the breakfasts have roughly around 300 calories. so look at that portion size. you get three quarters of a cup of egg. that's egg beaters. egg whites or egg beaters. you're cutting out some of the fat. >> what is this? >> full cup of berries. it's really satisfying.

and then the berries, they're so fiber dense and they really fill you up. you get a full cup. >> especially the blackberry, supposed to be the best berry in the whole. >> and the lunch? >> that is a ginormous chicken salad. that's actually the name of it. ginormous. four cups of lettuce with mixed veggies, four ounces of chicken. there's a lot of recipes in the book for homemade dressing. >> i couldn't eat that with a good, delicious dressing soaked in there. >> there are recipes for creamy dressing, spicy dressings, tomatoey dressings, balsamic vinaigrette. olive oil. you can. again, the portion size, look how tremendous. >> that's a monster. >> what are these? >> those are tasting plates in case you're hungry. dig in! those are for you. >> i thought this was a whole portion. >> by the way, it's not just salads. you can have sandwiches, burgers, tacos. it's all on the plan.

>> what's happening here? >> this is my version of chicken parmesan which i make with high-fiber breakfast cereal in a skillet, no frying, no oil. again, instead of pasta, i'm using broccoli slaw, which is a very common product that you find in the supermarket. it's pre-shredded, and it doubles as pasta. you add tomatoes or marinara. >> you boil it? >> in the microwave or skillet. it tastes like pasta with chicken. chicken parmesan is out of this world, truly. >> you want to try? >> why not? >> a little mozzarella on top. >> is it low-calorie mozzarella? >> reduced fat. slightly reduced. there's no difference. >> oh. >> and again, around 350 calories. so you get three meals plus three snacks on the plan. >> this is good. this would be a great day. >>ine. tell everybody about the wine. >> if you want wine, some people have been saying they've been swapping out a snack. i have a margarita recipe. you can have a glass of wine.

i don't say no to anything. i embrace all food. that's what it's about. >> is this dessert? >> this is dessert. it's one of the snacks on the plan. these are chocolate chip-stuffed strawberries. it acts as a little cannoli. this is ricotta cheese. if you're from new york like me, it's ricotta. >> it's ricotta. >> and then a little vanilla. a little sweetener of choice so you don't have to use -- you know, you can use an all-natural sweetener. you just mix that up. these strawberries have been cut. we scooped out a little of the inside to make some room for the filling. >> very cute. >> then you throw this mixture into a little bag. you could use a ziploc bag. you don't need fancy pastry bags. >> how cute. they're very cute. >> and if you like cannolis, you'll love these. >> thank you. this looks delicious. we're going to try them. thank you. >> thank you so much. >> you're welcome. >> we want to point out a big thank-you to the kessler collection and the castle hotel for furnishing accommodations to orlando for cindy and her family and universal for furnishing the tickets.
