if your refrigerator is filled with sweet summer peaches, consider putting them to use in a peach crisp so our "today" food team got to work and enlisted the help of "new york times" columnist in melissa clark. how are you? >> we've been talking about peach season and you guys are a little -- >> a little bummed. >> i wanted sweeter peaches. i haven't seen them. >> a bad peach ruins it for you. the good ones that don't have

peaches. peaches. >> so this is easy. >> when you get big peaches like this, even if they don't taste amazing, justyou can bake them up into a peach crisp. and that's what we'll do today. so we have our peaches and then i'm using brown sugar. >> light brown. >> light brown. it gives it like a caramel flavor so you're not just getting peach. minute tapioca is fabulous. it's not like tapioca pudding, it disappears and makes it thick and glossy. a little lemon to bring up the flavor. we have everything to make the crisp topping you need flour and sugar. always a little salt. >> this s this vanilla? >> this is almond extract. almond and peaches are so good today. and almond you can use or not. so first thing you want to do is take your peach -- do you know how to do this?

>> it's so cool. >> like an avocado? >> exactly. you twist it. now, they don't always come out this neatly. sometimes they make a mess. >> so cut it up into chunks. >> exactly. >> and don't peel it? >> i never peel peaches for this because peaches -- the skin has a lot of flavor and if you don't like if fuzzy stuff, you don't taste in the this. add brown sugar, this is tapioca. always salt. people think why are you putting salt into a dessert? it makes it taste more like itself. because the piece tastes peachy. >> that was just a dash. >> a pinch, that's all you need. a little bit of lemon juice and this is the almond extract. amazing you could use vanilla. >> i was wondering if you could. >> you could do a southern thing, bourbon in there. >> sure you could!

so you have to let that sit for a few minutes. you have to tapioca, it has to hydrate so those peach juices will make it swell and then we'll cook it. so we'll make the crisp. add everything all at once, brown sugar so much easier than using the butter. those are your nut, you can dump that right in. >> you can use any kind of nut. i want to point out, cinnamon, ginger and more salt. these just add that spicy little -- you know, you can use whatever. >> and then what happens? let's move down here to these. >> so i'm going to cook the peaches and you'll stir this until it looks crispy. >> you're cooking them in a skill let? >> this is the best part about this. >> this is what's so simple. >> you're frying the peaches! >> you're going to bring out the juices. >> that goes on top. you don't need -- you knew that. this is what's great about this recipe is you do the whole thing
