america that created wounds that are awkward. i happen to think we celebrate our democracy by best showing that we can transfer power without being ugly. president obama certainly did a good job. president bush created the good precedent. he allowed for the transitions to be done actually before the election. there was a lot of work done. president obama continued that tradition and actually got some support from the congress. so this year, both teams that were competing -- trump and clinton -- had transition teams that had been working since may. so there's been more groundwork done for this transition than any time in history. >> i know you believe that the chief of staff job is the first rst one he should address. tell me why. >> well, the chief of staff -- the only bureaucracy in washington that is not kind of dictated by congress happens to be the bureaucracy at the white house. the president gives definition

to the country and certainly to the world who about the united states is. but the chief of staff gives discipline to the white house. i think it is important for the president to name a chief of staff very, very early on. president clinton when he came to office, about the last person he named to be on his inner circle meant most of the people in the cabinet or the white house had already been identified and a matt didn't really have the gravitas given to him to help manage the daily operations of the white house. so i think it is important to name a chief of staff very early. it should be someone who can speak candidly to the president. speak truth to power. it should be someone who is there not to please the president, even though they serve at the pleasure of the president. they've got to tell the president what he needs to know, no the necessarily what he wants to know. even though the little piece of paper that is fancy that hangs on your wall that you all brag about, it says that you serve at the pleasure of the president for the time being. it is redundant and it is

insecurity on purpose. but your job is not to win the president's pleasure. it's to tell the president what he needs to know to do the job. >> a lot of people have observed that this time of transition before january 20th and the days and months after, in some ways the country is at its most vulnerable because you have new people coming in and learning these jobs, and everybody thinks about national security. tell me what's done -- give some reassurance about how the new administration will be ready. >> the new administration -- first of all, they will be very organized and planned. they'll probably have a 100-day plan and everything will be expected to happen click, click, you have to be ready for that. you have to plan for it but you don't have to broadcast it. but yes, on day one, the president is the president. it's not like the transition to be president is a process. no.

at a moment the president takes the responsibility and you have >> president bush even implemented -- they called it a table read, almost a drill to have that new team meet with the old team so they'd be ready for anything. >> president bush, george w. bush, did a great job of preparing the obama incoming team with real kind tabletop exercises about a disaster. and it was very helpful. >> andy card, great to have you here. >> thank you. >> thank you so much. appreciate it. when it became clear on election night that donald trump would be elected, there were immediate jitters on wall street. but thursday the dow surged more than 200 points to close at a record high. ali velshi is nbc's chief business correspondent. he's at the stock exchange. ali, good morning. >> reporter: lester, after two days of major gains, markets are taking a little bit of a breather, but don't let that even if it lasts be a reflection of anything political. people often sell stocks after a rally. that said, the dow was near its

all time high before it started to head lower in the weeks before the election, so this record has more to do with the normal market behavior than with donald trump. what investors are liking specifically about this election is the combination of trump's pro business ideas and a republican congress mean that certain sectors, think of banking, finance, pharmaceuticals, coal, electrical utilities and other industries that face a lot of federal government regulation, they are likely to do well under a trump administration. experts say to expect this kind of short-term volatility for the next couple of months as investors parse every move donald trump makes and buy and sell stocks accordingly. lester, savannah? >> all right, ali, thanks very much. hillary clinton meantime getting much needed peace and quiet after a long, grueling campaign. take a look at this photo. a woman actually spotted her out on a hike on thursday near clinton's home in chappaqua, new york. man behind that shot, former president bill clinton. margot says secretary clinton was gracious and kind and she

seemed smiling and happy. she said she posted the photo hoping it brings clinton supporters some hope and some comfort. newly released video shows the oments from inside and outside the pulse nightclub at orlando during the shooting rampage in june. body camera video shows police storming the building. you can see officers running in all directions with their weapons drawn looking for survivors and for the shooter, omar mateen. disco lights are still on. you can hear cell phones ringing. much of the video was blacked out to protect the victims. 49 people were killed, 53 others wounded during that rampage. aaron schock, the former congressman who resigned last year amid scrutiny over lavish spending was indicted on thursday on 24 counts, including wire fraud and theft of government funds. schock was criticized for spending thousands of dollars redecorating his capitol hill office in the style of the television series "downton

abbey." in a statement, schock said he never intentionally did anything wrong and he is eager to defend his name and his reputation. secretary of state john kerry has gone where no high-ranking u.s. official has gone before. he's in antarctica for a two-day trip to talk with scientists about the impact of climate change. during his visit, kerry is going to a research station that the u.s. government operates near the south pole. that's kind of a cool adventure. >> and a nice transition to al and the weather. good morning. >> good morning, guys. we had a lot of talk about el nino earlier this morning. now we are talking about la nina. that is when we start to see a cooling of the pacific waters, cooler than normal as you get closer to the equator. we get la nina. it pushes the polar jet stream up to the north. from december to february we're looking for cooler, wetter weather from the pacific northwest into the great lakes. warm and dry through the southeast, gulf coast and the southwest. not good news because we've got a really strong drought going on through the south. in fact, take a look at these

donald trump's stunning victory came as a surprise to a lot of pundits and pollsters. >> he managed to win several battlegrounds once consider locks for a democratic ticket. one reason -- big voter turnout in small towns. nbc's gabe gutierrez is in canton, ohio with that part of the story. >> reporter: lester, good morning. this is stark county, ohio, about an hour south of cleveland. back in 2012 the vote was split about evenly here between mitt romney and barack obama. but this year donald trump crushed hillary clinton by 17 points. >> reporter: this morning across the heartland, there is one word hanging in the air. >> a change. >> it is time definitely for a change. >> reporter: change. a word no longer whispered but shouted in rural america. >> out of a revolt. just tired of the government the way it's been. >> reporter: president-elect donald trump flipped much of the rustbelt, the same voters from supported barack obama four years ago. pennsylvania, ohio, wisconsin and iowa, all unexpectedly

around. >> ant he is being raised to b service dog for a veteran. i adore amos and benjie. what does it mean to have amos in your life? >> went from living restricted to go anywhere. stairs. walking distance. wherever. he actually helps me with my gait. up and downstairs is not an issue where it used to be little bit rocky. but it is an amazing, amazing feeling. really is. >> incredible to see how much of a part of your life. joe, tell me your dog, how much it's meant to you. >> he's a part of my family. he's a part of my support system. he's helped mitigate my disability to the point where i'm a completely different person than i was when i first got him. i got him back in 2008. this has just been dedicated my entire time since then to helping america's vet dogs. it's just something i believe in so strongly. game changer. >> we love having you here.

weather food even though it's not super cold outside. >> here are our ingredients. some sausage and turkey and tomato paste and vegetables. >> what is this? >> this is fennel. you know, it's a vegetable. >> i'm not known for my culinary expertise. >> we're going to cook all this together and we do it with homemade pasta at the restaurant and you can do dried pasta or whatever you like. >> what is our first step? >> browning the meat. we have turkey and sausage here together. we'll put in the oil and cook that a little bit and remove this to a side plate. >> okay. >> and we're going to put in the vegetables. here i go. >> you're just browning right there. >> just browning the meat. takes ten minutes to brown the meat and if you're good, pour it all over the side of the table, as well. put in the oil. little extra virgin olive oil and chopped vegetables. >> use the bits and parts at the bottom of the pan. adds the flavor. >> we'll get that going. that will cook for about, come on, lester, get in here. and we get that going for about 15 minutes or so.

everything turns translucent and what we have here are the vegetables that have now cooked down with all the meat trimmings and we'll add safron which gives it great color and really some terrific fragrance. >> little tomato paste. >> littletima tomato paste and . it's great farmers market and helps to get your veggies in there. >> i knew that was kale, just to redeem myself. >> we put some wine in and we'll cook that down. >> okay. i want to leave minutes for the subs. so, show me. the vegetables and everything cooked together. we'll put the meat back in and cook the tomatoes and add our stock and let this cook for about 45 minutes until we get it down to a little ragu. toss it with our fresh pasta, which we have here. and -- >> beautiful. we have our tasters downstairs. >> save me some. >> lester and missy do their thing. >> can't handle ow good this is. >> you're going to turn into heroes. this is bread that has been

soaked in milk which is the key to very, very tender meatballs. this is just turkey meat, which is a little healthier than some of the rest of the meatballs we see out there. and to make it taste awesome, we do parmesan and chili flake and garlic powder and fennel seed and these are onions that have been cooked down, which also add a little moisture. and that's, to me, the key to meatballs. >> everything helps them bind together. >> once they're really mixed up here. you can do this with your hands, too. >> tasters, what are you thinking down there? >> and then they just go -- you ball them up here. you can pop them in the oven 450 for ten minutes and once they're cooked, we have a pot of really tomato sauce and they just go right in here. and finish cooking for another ten minutes or so. >> this is very quick. >> i mean, we're doing it a

of how i would respond if my friends were in trouble or my mom. they needed that shoulder to cry on. just very encouraging film. and i think it's going to be really amazing. the other really cool thing about it is that disabled american veterans we are, i'm an ambassador for them, but a part of the proceeds from the film go to them. >> i don't think i ever heard of that before. that the proceeds go directly to a veterans organization. that's beautiful. >> i think it's going to be great. anybody who sees it will come out encouraged. i feel like they're going to be better than when they walked out. >> what is so great about this, you're seeing more and more of it, that there are these great faith-based films coming out that are addressing, you know, real need that's out there and a real desire i think people have. >> i think people -- hope and faith is something that people sometimes they don't realize they need it until they hear a song or they see that movie or see a small act of kindness and then it changes them, right?

it makes them want to do the same thing for somebody else and i think, you know, now more than ever we need hope and we need faith and love and kindness and life is about choices. we choose to be happy. i'm going to choose to be happy and choose to love and i hope that somebody sees the example and does the same thing. >> you're just infectious. >> in a good way. >> in a plague way. your happiness is infectious. so mean. brian is a veteran. >> yes. >> we have a picture of him. >> yes. >> there you are with your body guard and your stepdad james also a vet. you spent time at the national training center in san bernardino and i was told you were put through your fapaces. is that true? >> i got to train with them. they built a town and a city -- >> look at you. >> gear and everything. i didn't get to wear the fatigues, but, i mean, i think that's about 40 pounds of gear. like there's a vest and a vest on top of that.

>> but -- >> i got lucky. they said there's certain packs where it's like, you know, somebody gets the skittles and everybody kind of fights over it. hey, you had skittles yesterday. i want to support the troops any way i can and to actually go and to actually train with them and see what they go through because you think about it and it's not your reality if you don't have anybody who is currently serving or you haven't gone through the experience. but holding that gun and that's the city they built, so it's like how it would be if they went over seas. and if you haven't been, it's definitely very interesting. but i appreciate them. >> one of the things that changed my life was doing a uso tour with jay leno and craig robinson and slwe were at baser

omar is incredible in the show. it is very different. people who enjoy the book and the movie will also enjoy the series but it is not a retelling. >> it stands on its own. >> absolutely. >> that's awesome. what was it like training for the role of a former marine? i'm sure the mental has as much to do with it as just the physical? >> it absolutely does. especially if you talk about the technique behind being a sniper. it is very zen, very meditative. focus on your breathings, even your heartbeat can throw off the accuracy of the shot. i shot with the chief of the sniper school in the marine corps. i hit a 12-inch target at 900 yards. >> you did? >> yeah. >> hello! >> so it's legit. what you are seeing is real. i worked hard. >> do you transfer any of that zen behavior to your every day life? it seems like after training for something like that i would go to my zen spot every day. >> little bit. i'm trying to meditate a little bit here and there. . i think it is a positive thing. >> you got something you're very

this morning on "today food," sausage stuffing two ways. all month we've been cooking up thanksgiving dishes to help you plan your holiday meal. joining me this morning, my pal, bo mcmillan, executive chef of sanctuary camelback mountain resort and spa in arizona. he makes his sausage stuffing one way, i make mine. i'm not going to say better, just a little different. but it is all beautiful because it all ends up stuffing. >> it's all gravy! >> that's it, baby.

chestnut, breadcrumbs, on jobs, eggs, apple. this is a simple, traditional recipe. grew up in plymouth, massachusetts. keep is simple. the home of thanksgiving. i've added onions and celery diced to the sausage. just kind of sweat that until it is translucent. once that's done, your base is ready for your stuffing. i've got some awesome brioche. real buttery and it also keeps your stuffing a little bit -- it doesn't let it dry out. it's really, really nice. >> very airy. >> exactly. put that into the pan. once those brioche cubes are in there, just basically sweat off a little bit of sugar and butter. that's where the chestnuts and apples go. then you are ready to fold in everything here. beautiful. want to season it up, of course. fresh parsley. i've got some beautiful thyme. i've got some awesome sage. don't be scared with it. >> no. >> little bit of egg.

then we're going to add a little bit of chicken stock. then and the cider vinegar. >> adds a little sweetness to it. >> give it a little salt and pepper. that's important. now you are ready to mix this bad boy and get it into your casserole dish. one of my tricks, we put -- for 500 people on thanksgiving we cook for 500 people. we mix it up real good, then butter and line the pan, parchment on top, 40 minutes at 350. you are ready to rock 'n' roll. >> you put it in the oven and it comes out looking like this. do you like to bake yours separately or put it in the turkey? >> turkey. old school. >> yes! nobody's gotten sick doing that. >> exactly. >> come on, people! i'm going to do a little cornbread stuffing. cranberries, chestnuts. they made me put celery. i don't like celery. get that out of here! we've also got some hot sausage.

same kind of thing, brown off the sausage. then once we do that, we kind of get rid of that and put it in a pan. and then what we're going to do is take some of the onion, sweat that down. we've got some sage and rosemary. and again, not using the celery. >> i like that you are bringing the meet with the spicy sausage. >> thank you very much. we take that, we've got our little sausage here. throw this in. here's the deal. with the cornbread, can you buy the cornbread ahead of time. let it sit for a day or two so it gets a little stale. or, you can make your own and let it sit for a while. now you've got your cornbread cubed. for a little sweetness, i went with cranberries. >> nayive to massachusetts. very nice call. >> chestnuts. it's nice, it is a sweetness, a little meatiness. then you take your onions and your celery. if you put it in there and of
