8:37 am
>> it's really short >> reporter: but the 33 days of gestation is just the beginning. the baby koala bear climbed up into the pouch where he lived for six months, starting out the size of a jelly bean growing, finally, just over a week ago, hope emerged from his momma's pouch. how did you feel when you first saw the head pop out >> oh, my gosh i cried. it was amazing it was the most miraculous thing i've ever seen to see the eyes open and look at you. >> reporter: i'm looking down here and it's mesmerizing. it really is as much as i want to say koala bear, not a bear >> they're marsupials. they have pouches just like kangaroos do >> reporter: hope's arrival coming as his native australia is on fire koalas, kangaroos, and other indigenous animals trapped and dying. an area about the size of south dakota burned so far the social media videos are heartbreaking. >> poor little thing

8:53 am
>> just one side until it's a deep, golden brown then, we go in the oven. a little trick, on a pan, a little water and oil the water helps maintain the temperature, so the fish on the bottom doesn't burn or overcook. >> you've given us three pro tips so far. >> you can do it easily at home. you'll leave today and know how to do it >> that's not true what do we have here >> this is the base. sauteing shallot, ginger, lemongrass, a little jalapeno for some heat. saute that we're going to add some spices, the same one we have on top of the salmon, just so they're aeromatic. sauteed. and we're going to add water >> okay. >> okay? >> this is coconut milk here >> coconut milk. half of it we're going to bring it up to a simmer let it simmer for about 30 minutes. all that flavor gets extracted then, strain it out.
8:54 am
>> strain it out we're going to show the finished product in a second. it smells fantastic. what is it >> this is an herb puree we have chives, mint, dill, cilantro, tarragon and basil you cook that in boiling water, shock it in ice water, then blend it up for a little puree it goes nicely with our base here >> what's the verdict, ladies? dave price >> it's delish >> fanst fantastic >> the spices are interesting. >> next time you get the salmon, not the burger, right? >> i will. >> salmon is intimidating. fennel, more intimidating. >> i don't know why that is. >> i'm not a professional chef >> vegetable versus a -- the fish might eat you fennel isn't going to eat you. fennel, really nice. you can eat it raw we are braising it in a little water, lime juice and basil, for
