extra special because it's your mother's recipe. >> well, yes my mom made chili for me growing up every football game, it was in the crock-pot. i'm so excited to share her secrets. >> what do you use >> all right well, my mom uses chili powder, but the chef in me decided to make a fresh chili powder. i'm using ancho chili. it is an extra step, but it'll give the big, bold, chili flavor you're looking for first, we're starting with beef chuck roast. i like to dice it about 1/2 inch. i'll render it down, inch i'll render it down, get a little color on it here in this pot, i have some onions and garlic. >> i can smell it from here. >> getting nice and brown. oh, it smells good a little bit of the chili powder this stuff is where you toast the chili powder in the pot. ancho chilve the pacea. >> are you going to tell us how you make the chili powder?

is that a proprietary secret >> all you do is you want to just take the chilies, and i toast them on a cast iron pan until a golden, nutty smell comes about. then put them in the blender it's so simple. >> all right >> all right chili powder goes in now i'm going to caramelize it with tomato paste. one 6-ounce can of tomato paste. a little cumin oregano. giving you all the secrets ready? >> yeah. >> yeah. >> dark beer you have to have a good can of beer in the chili for football >> i like that. >> my mom's secret ingredient. spicy vegetable juice. >> all right we're going to put the rest of this on the website. how long do you let it cook, sarah?

this brisket i'm going to actually show you where the burnt ends come from on the brisket so if you look here, the meat is in two parts if you follow this fat line down, with a knife just go straight down, you'll get to the fatty point of the meat. this is actually called the point. you've got that nice marble that's on there. during the cook, that renders down and gives you all of the flavor and the juiciness of your brisket and your burnt ends. >> phil? points. this is what i'll get. after you throw it in your >> i'm going to -- huh >> how do you rub it what's your rub secret >> yup so my rub is, you know, proprietary, as well, but i love paprika, smoked paprika, smoked salt i'll throw that on the burnt end side on the points this is what i'll get. after you throw it in your smoker, you get a nice, tender piece with some nice burnt ends. it doesn't mean the meat has to be burnt what i do is once i get halfway through the cook, this is
