in phoenix could be among the first in the nation to receive this vaccine, pending fda approval. so what they are doing today is a test run to get ready toe val wait themselves to see how efficiently they can roll out the vaccine to the thousands of health care workers who are standing ready to receive it. >> reporter: nine months into the covid-19 pandemic and more grim records. another 2700 americans died in the virus in the last 24 hours and more than 100,000 patients in the u.s. are currently hospitalized. numbers almost too big to grasp and each representing an individual tragedy. >> for me, whereas i can't understand the numbers, i can understand the humans behind those numbers. >> reporter: after a busy thanksgiving travel period, front line workers are warning that the situation could still get worse. >> things were steady, and then all of the sudden, boom, and it

just seems to be nonstop. >> reporter: california plans to impose new stay-at-home orders where intensive care units are close to capacity. in lubbock, texas, there are covid patients in need of care, but the city is completely out of icu beds, and the virus is hit hard at veterans facilities nationwide. this new hampshire home has lost at least 15 residents including ellen oppenheimer's husband martin. >> i was married to him for 66 1/2 years and i was not there at the end. i couldn't hold him, and i couldn't say good-bye. >> reporter: in the midst of so much loss, the promise of a vaccine offering hope, but the roll out is going to present its own challenges. pfizer which had hoped to ship 100 million doses of the vaccine by the end of the year is now aiming for 50 million worldwide because of the issues of raw materials in the supply chain. >> this is where the product will go. >> reporter: and with the first

round of vaccines possibly rolling out as early as december 15th, the hospitals are doing the trial runs to make sure that everything is ready on day one. >> the biggest challenge that we have is that we don't know what we don't know. >> reporter: uncertainty and anticipation as the nation struggles to survive the winter surge. the hospital here has set up a drive-through location where they can vaccinate 1,000 people a day, but part of the challenge they tell us is finding the people to administer that vaccination, because many of the health care workers are stretched thin since covid is surging here in arizona as well, so what they are telling sus that th -- us is that they are leaning on the volunteers or the medical personnel that are retired to assist in the process. >> this is going to take everybody. thank you very much, megan.

and where things stand with the virus and the vaccine. dr. fauci, as always, it is good to see you. >> thank you >> we are now faring worse than many feared that we are seeing more deaths than ever before in this pandemic, and more hospitalizations and cases, and i think about us talking back in march and april. is this worse than even you had feared >> well, i think that it is at least as bad as i had feared, savannah, and we are in a precarious situation, and there is certainly light at the tend of the tunnel with the vaccine, but we are not there yet. so we have to intensify our public health measures to try to blunt this trajectory which is significant. it is a combination of things. it is a combination of getting into the winter, and people spending more time indoors, and combination of the holiday season, and people doing the normal wonderful things of congregating at meals with friends and family, and you

know, as innocent as those things seem in fact, those are the things in many respects that continue to drive this, and now that we are approaching this christmas season, it is more of a challenge, so this is a tough situation, savannah, and it is not easy. >> i was going to ask you that it has been eight days since thanksgiving and do you attribute any of the surge that we have seen since thanksgiving to thanksgiving and the travel and the get togethers that did happen >> maybe a little bit of the blip, is a van nash blip, savannah, but we don't expect to see it until two to three weeks post, so i don't believe we have seen the thanksgiving peak, and that is concern, because the numbers in and of themselves are alarming and then you realize that it is likely that we will see more of the surge until we get two to three weeks past the hospital, and the thing that concerns me is that is abutting to the holiday as people are shopping

and congregating and we plead to them as best you can of the uniform wearing of masks and keeping the distances to the best possible way you can and avoid the crowds in the congregant settings particularly indoors and in that circumstance, always wear the mask. >> dr. redfield of the cdc said that it is going to be a situation where we could have 450,000 people dead by february if nothing changes. at this point, do you feel that it is more likely than not >> well, you know, i hope that's not going to happen. and this is is the reason why all of us are out here telling people, literally pleading with them about the fact that we can do something about that. it should not be despair where you throw your hands up and say it is inevitable and it is going to happen. if you do the fundamental things of public health measures, you can blunt it, and now probably more than ever to double down on

it, because vaccines are literally at the threshold. we will be starting to administer to the higher risk people, and to people who are the health care providers in mid- to late december and then getting into january and february and march, and more and more people are going to be vaccinate and now is the time to hang in there and not give up. >> on the subject of the vaccine, you told the interviewer that the brits rushed through the approval and took the company's, pfizer's word for it, and they didn't do the same, and that didn't go well for the friends across the pond, and you took pit back for certain extent, but did they rush the approval? >> well, i don't think, so and the reason i, and i apologized publicly on bbc about that, and i felt badly that it came across that way. the reason it did is because it is one of those things they sat down in front of the tv with a

british tv station, and the first thing they said is ah, we beat you guys and we beat the americans to the punch, and i kind of reacted back at him, when i think that i should not have done, but when i got back on bbc i explained it is out of context. the brits are good and they know what they are doing, and they are really pros and it is not really what i meant. >> that raises the question, what is taking us so long then if they can approve it, and should we be moving faster >> and that is great question, savannah, and in fact, the process is a little bit differently. what our fda does is that they scrutinize every single bit of the data themselves. they don't just take the word of the company that this is the way it is. they act like they are really a reviewer for a journal. that is just the way they do it. it is a little bit different than with other regulatory agencies do, and i'm not saying

it is better oworr worse, but is different. so i will say that we are the united states the gold standard of the regulatory of looking at things like drugs and devices and vaccines and no question about it, and i certainly would not apologize for that. >> the huge challenge is not just getting the vaccine out of the door and into the people's arms, but convincing them that it works and i have seen surveys that say that 30% of nurses say they won't get it, and so how do you know it is safe long-term, and we can trust the regulators and trust you and the drug companies, but nobody got this shot until a few months ago and how do you know it is safe long term >> right. and well, that is an obvious good question, issavannah, and what you do is to look at the history of the vaccinology, and you look at the events as they occur, and you look at the overwhelming majority and over

90% or of them occur in 30 or 45 days and that is the precise reason why you remember back a couple of weeks ago the discussion that the fda said they would not issue an eua until they were 60 days beyond when half of the people received their last dose. so they have already baked in that 60-day period of observation before they do anything. so right away, they would have captured the overwhelming majority historically of when you see so-called long-term effects of a vaccine. >> joe biden said in an interview yesterday in an inauguration that you can wear the mask for 100 days, and just 100 days and not forever, and is that enough or do you feel that might put an artificial time limit on how long people may be needing to wear masks? >> no, no. he didn't mean it that way. i spoke to him about that. what he wants is that he wants

to get and it is a good idea uniform. he is saying, hey, folks, trust me, everybody for 100 days. and now it might be that after that, we still are going to need it, but he wants everybody for a commitment for 100 days and i discussed that with him, and he said it is a good idea. >> he said when he spoke with you that he wanted you to continue in your role that you have had for six presidents, and chief medical adviser and did you say yes? >> yes, on the spot. yes. >> and some folks think that seeing high high profile individuals such as yourselves and when it is time to get your vaccine on camera, do you believe it is a good idea, and would you think it is a good idea or any other high profile celebrities and if they get the shot and get it on camera, people will have confidence? >> well, it is a good thing.

the oregon area. where it was made legal in 2014. >> how would you describe the effect it's had on the state of oregon >> from an employment and tax revenue perspective, i think it's had a great effect. >> reporter: states stand to gain a huge profit. colorado one of the first states to legalize marijuana surpassed $1 billion in tax revenue from sales. also it has seen many reforms in the criminal system. by decriminalizing marijuana, many convictions would be expunged and states would be incentivized to do the same. black americans are more than four times likely to be arrested for marijuana. the bill is set to pass in the house, but likely to hit a brick wall in the senate. majority leader mitch mcconnell said that he will never bing a marijuana legalization bill to the floor. >> the house of representatives are spending this week on pressing issues like marijuana.

new state record five out of the six largest fires burned this year we're watching more problems today. this is a rare threat in december strong offshore santa ana winds and wind gusts up to 95 miles per hour in the san gabriel mountains. normally in december we usually have not quite record high hot and dry conditions but we have very dry conditions. now we have red flag warnings up in december. this is really rare, especially for northern california and straight through saturday we are looking at a critical fire risk from santa clarita to san diego and big, big problems. on average, i should say 10.7 million acres burned in 2020, and that's three times the modern record, and this is an eight time annual increase in acres burned because of climate

on the grill we are back with "today food loves football." it's a battle in the afc west. they're going to battle it out sunday night right here on nbc if you're looking for the ultimate gameday feast, we have what you need. >> it's right up your alley. >> matt is joining us from nash little with some great recipes good morning >> thanks so much for having me. >> i love your whole philosophy, like anything can be made on the grill. >> that's totally true we're going to cook up some of my favorite classics this morning representing the broncos and chiefs we're going to start out with a classic chili on the grill in colorado, chili is akin to a louisiana gumbo. there are thousands of versions. we're going to a standard kind of red beef chili. i have a charcoal grill today. can you do it on a gas stove and on your stove top. a little less charcoal here allows me to control my fire in the dutch oven i have a

little bit of onion and garlic this is a little bit of a hack for everybody because i want to push the vej to the side and then add in the ground beef, and the reason i am doing this is because i want to make direct contact with the heat. we talk about in the book of the reaction which is brown food is good food, so that the more we brown it and develop that great flavor, we can break it up and get a nice sear on it and deepen the flavor in the chili. after that, we have a round of spices for you, which is like a painter's palette, and all of the classics here, chili powder and cumin, and all spice and coriander and cocoa powder and some cayenne for late built of the heat, and that is going to go in. and then to finish this dish off, quite simple, thin it out with a little bit of water and add in the tomato sauce to give it the beautiful flavor, and

then a little bit of the red wine vinegar to help to finish it off. we will stir it up together, and cover it and move it to the otsihede of the grill once it is nice and brown and you can see the beautiful shot today, because we are finishing this up, and super simple and sour it gets. cream and cheddar cheese and little chili powder for added spice there. >> how long? >> well, you move it from the direct heat side to the other side for simmering and that is the great thing, you can have a serving and people can spice it up, but the thing is that it goes fast. and paying homage to the chiefs, i will work up a two-step brat slider. kansas city is known as the most amazing barbeque city in the world, and anybody who knows barbeque knows that any venerable barbeque spot has some form of sausage.

so carson, when you tailgate, i like that you can drink the beer and eat it, too. so i have a mixture of the beer, and onions and thyme, and i have poached the bratwurst in that mixture. the second step, and this is step one here. i am going to go ahead and take these, and again the idea of the brown food is good food is what we are looking for. so get the beautiful color on the outside to add so much more flavor and you can see that this is ready to go, and this is the spot where people are walking by the tailgate and they want a quick bite, so we finish it off. i have taken some time and a toasted bun here, and some creole mustard and then add to that this beautiful brat and then the onion mixture that i had with the beer, i have cooked it down, and i have got these onions that we have gridled right over the top, and this is a home run bite to keep your hand warm and fills the soul at the same time. and so a classic dish that you can represent the chiefs for the weekend as well. >> quickly, matt, how long did that brat braise or whatever in

that mixture >> yes, so it is typically, you are going to have it 10, 12 minutes to cook through, and you can see that it is on the indirect side of the grill, and kit sit there a it can sit there and when people are ready to eat, you can heat it up, and ready to rock 'n' roll. and one more finale and believe it or not, the idea that you can make anything bert on the grill, and we have the nachos in the beautiful cast iron skill let and we have pulled pork, and avocados and pickled onion here, and my whole part of the socially distanced thing is that this is all for me, and if you want to share, you have to get it on your own plate. >> those are all great. i want to pick up that book. it is recipe at "today."com/food, and catch the game, broncos and chiefs head-to-head coverage at 7:00
