u.s. figure skater nathan chen, the road to gold and redemption started monday night >> it's not 2018 anymore >> reporter: his emotional fist pump at the end of his program telling us all we need to know >> that performance was a stunner. he did everything he needed to do. >> reporter: did he ever >> nearly 114. >> reporter: chen receiving the highest score ever in a men's short program. >> not a guy who often shows a lot of emotion at the end of that you were visibly happy. >> it was a spur of the moment thing. just really happy with that skate. >> reporter: element after element, near perfection >> so good. >> reporter: the men's short program is one of two skates needed to win the individual gold medal 170 seconds of pressure and requires the skaters complete three jumping elements in three attempts because it is shorter, it is both easier and costlier to make errors but on this night, nathan chen made no errors

it is a far cry from chen's 2018 performance in pyeongchang where, as the gold medal favorite, he had a disastrous short program. >> wow a major mistake there on a triple axle. >> reporter: chen rallied to finished sixth landing a record six quads in the free skate but he didn't medal. since then he's been almost unbeatable winning 15 of 16 competitions. monday's performance was a continuance of that dominance. he helped lift the u.s. team to a silver medal in the team competition. chen's chief rival, japan's two time gold medalist hanyu, the last man to beat chen, made a major mistake leaving out an essential element during his routine now the door is wide open for chen if he wins it will be the first gold in the sport for the u.s. in over a decade and the young man will finally

that it is going to happen exactly the way he wants it to happen and it was just so much fun watching him deliver the goods on his redemption olympics and now he's got a big lead going into a long program where he doesn't need one. and he's going to be practically impossible to beat the only one that can beat him at this point is himself, and i don't see that happening >> it is so fun to watch as you said not only because of the artistry and sheer skill but because he has closed the door we are burning the 2018 tape and never showing it again because this supersedes everything talk to us about how the free skate plays out. is that harder is it longer how does -- you know, does he have more to prove there how does that play out >> well, nathan chen rewrote kind of how people build their long programs. he's forced everyone else to try to come up to his level of

ability. and so five quad passes. look at his closest competition and it is just like, they are capable of incredible things and they are phenomenal skaters but they are not quite at his level of proficiency and consistency so it is going to be nathan just going out and doing a program by the rules he's written for everyone else. and just seeing his demeanor, seeing his consistency, seeing his approach, seeing his confidence build with each performance. i just can't -- i mean, long program can't get here fast enough for me. >> well, scott, there is precedent for someone who doesn't do as well in the previous olympics and then they do super well four years later you were in that category. i think you finished fourth or fifth and then you ended up later. fifth? same with brian boitano. what happens in those years to change the way you skate and the

way he's skating >> well, you mature. you mature mature. it's almost like a refining happens what does a diamond look like when you take it out of the ground it is kind of that and over the four years you gain experience, perspective, confidence you just gain everything you need to be able to next time around with that previous experience take a whole different intentionality, a whole different mind set a whole different level of proficiency. and it's just remarkable what can happen after, you know, three world championships and an average, you know, victory of over 19 points against hanyu which is his biggest rival. hanyu basically took himself out of the competition last night and the other two japanese men are formidable but all nathan had to do -- i said it a million times and i'm

in a china jacket. the ioc insisting they are supporting her >> i think we need also to listen to her, and we need to read what she's saying >> reporter: at the weekend she told the french newspaper a sexual assault allegation against a former chinese government leader was an enormous misunderstanding. her original social media post was deleted soon after it was posted but now a series of photos emerging from the interview appearing to show a chinese olympic official accompanying her. the french newspaper calling the interview staged managed and the women's tennis association saying the interview does not alleviate its concerns. as we would do with any of our players, the wta ceo and chairman says we have called for a formal investigation into the allegations by the appropriate authorities.

and for the wta to meet with peng privately to discuss her situation. and this morning, continuing controversy over china's choice of athlete to light the caldron. a member of the uyghur minority took part in her second and last cross-country skiing event today. china angered by criticism by the u.s. ambassador to the united nations >> uyghurs are being tortured and uyghurs are the victims of human rights violations by the chinese and we have to keep that front and center >> reporter: china's u.n. envoy attacking, quote, wrongful, irresponsible remarks, and accusing u.s. of a disgraceful record in violating human rights but the president of the world uyghur congress, representing uyghurs around the world, telling nbc news this morning. >> all uyghur, athletes, is a hostage. >> china rejecting the accusation, and denying claims of human rights abuse against uyghurs.

perspective. bravo to you both off and on the ice. how are you feeling physically and how are you looking at your future in skating now? >> well, you know, i was asymptomatic all up until the positive test. it did come as a shock right now i am -- i would say 99% asymptomatic still i'm hoping that i can recover very quickly and the world championships are not long from now, so i will be trying to make a quick recovery and hoping to represent team usa with all of my best over there at the world championships. >> the world championships are just around the corner, there's another olympic games that comes up in four years have you even allowed yourself to think about possibly competing in another olympics? >> well, you know, when i was young, i said that i would compete in four olympics, all the way until 2030 but, you know, we'll see

these noodles -- it means fried noodles. means bean paste what this is, it's a traditional beijing noodle that is built off of three types of bean paste this is a spicy paste, and this is the crux of it. it's fermented wheat and soybeans it doesn't look very pretty right now. we're going to doctor it up. this is a little bit of brown id sugar to aid the caramelization process. >> are these pastes hard to find for people >> nowadays, you can get most of these things in chinese supermarkets all over. we got these from chinatown earlier the other day. all of this is going to come together

and a little of that savory umami sauce. >> are you mixing it fully or a light toss >> you want to get it mixed pretty well together with a little bit of this liquid. this is rice wine. deeply flavored sauce. what we're doing here, we're trying to harness all of that flavor from months and months of fermentation that's all it is and the cool thing about this dish, it's very, very popular in beijing, but this also became a superpopular dish for people to eat in korea it has a version -- >> and you do this sauce first so it can have this time to -- >> yeah, we're going to mix this all together >> we move over here magic of tv. >> this is the premade sauce but the reason why i love this sauce is because of how many layers of flavor there are this is pork belly and it's really quite fat, right? when we add this to the wok, we're going to keep it on medium
