we're back with "today" home we talked last week about that tomato shortage but have no fear because dominique charles with us today, spreading joy on social media, and this morning she's showing us how to make the most of your home garden good to have you here. i don't know what you're doing with the onions. >> just sauteing them. when you have your abundance of tomatoes from your garden, i like to save them over time. so i start off with you can -- basically i like to can or freeze the tomatoes so do a baseline of sauteing some onions

and throw in some tomatoes these are heirloom tomatoes and then we'll add seasoning. >> is this a stewing process >> we'll saute these down. honestly we can do them all. >> this is part of the preservation of tomatoes. >> absolutely. >> this is one way to have the summer tomatoes and use them months later. >> i'm not much of a canner. my grandmother was a great, great canner. >> what makes a great scanner. >> being brave enough to do the water part i'm not fully there yet. but i stew these and add seasoning. so add some. not all of it. >> i have a heavy hand sorry. >> don't get carried away. once we get ready to do that ideally what you would do in terms of canning is put this in a nice sterilized jar, put your lid on nice and tight and then you're going to go ahead through

this process this one has been started and so -- >> you put it in hot water >> hot boiling water and then you want to pull it out with the canning tongs. we don't have them today -- >> how long do you boil the tomatoes. >> i don't know. i'm not a good canner yet. >> what do you do with this? >> the lid is pressurized. once it's pressurized and cooled you want to take it out and screw the other lid on top of it. >> how long is that good for >> a year, maybe 18 months you can go that way. another thing i like to do with tomatoes is honestly it can be with any really good summer fruit or vegetable i get. if i have a really good tomato, i want this later. we'll seed save, cut the tomato up and pull out the seeds. so here's one for now. but then we want to clean them up and let them sit on a paper towel. >> what are you going to do with that one little guy? >> not that one. we let these dry out and once they dry out we'll use them next

8:49 am
>> same thing. this is cilantro, you can use the same method of saving your herbs. >> what's next >> kale or collard greens. >> this is blanching. >> this is blanching >> do you want to do it? >> sure. >> drop it in your hot water bath >> there you go. >> after about a minute you want to pull it up and then once you pull it up, drop it in your ice water bath. >> and that stops the cooking process? >> it stops the cooking process. one of the last things we do is olive oil saving i love basil and love to keep it in these little olive oil cubes. anything you do with italian cooking -- >> you have like an ice cube tray you can put any herb down. >> basically, not parsley or cilantro. >> but basil. >> exactly
