great recipes to share and she's celebrating the launch of the food bank for new york's woman-to-woman campaign, which raises funds for hygiene kits for women and girls facing poverty. this is something you've been doing for a while. >> i've been involved with the food bank since about 2015, 2016 i feel like i'm so fortunate to have this career that's all about an abundance of food so i feel obligated to give back to people who suffer from food insecurity and we started this woman-to-woman campaign because, obviously, if you can't afford to buy food, you can't afford to buy your personal hygiene products or diapers, formula, and the cycle of poverty just continues. >> it's great you're doing that work easter brunch, a little fritata. >> yes, we're making a little spinach fritata. a very spinaching weekend. and we're going to start with a leek do you ever cook with leeks? >> i do not. >> sometimes people get a little

intimidated by them. get rid of this part and we'll cut up the white and light greens into little rings this part can get dirty and let it soak in water and all of that will come out and soak to the bottom dry them off i'm meting butter and we'l saute these. and leeks give so much good flavor if you don't want to use leeks, you can use shallots in this recipe or dice up some onion cook that down and then we're going to come down here to our asparagus. it's asparagus season. oi i always look forward to -- i had some last night that was so good. so i'm just going to use the tips for this recipe >> i thought it was in the celery family, but it is more like an onion. >> oh, yeah. save these, make an asparagus soup, but for our fritata, we're just going to use the tips i gave them a quick blanch. >> nice. >> why don't you beat some eggs

and i'll trade you places? >> you got it. >> i'll dump in all of our ingredients. i have some spinach, cook this down and really drain the water out of it. squeeze it in a towel. i'll dump that in there for you. and i've got our leeks that we cooked down. and i'm going to add our asparagus. >> what's the difference between a fritata and an omelet? >> an omelet, you're making to order, a fritata, you can make ahead of time. it is fine to serve at room temperature. it is great for an easter brunch you can let it sit out >> like a crustless quiche >> basil, goat cheese, parmesan cheese >> wow u i'll show you what i like to do instead of cooking it in a skillet, i like it to do in a spring form fan, because it pops out nice and easy. and i put a little bit of bread crumbs in the pan. so it gives you -- we said in the back, quiche energy, it has a little crust to it and it comes out like that. go ahead, carson >> there we go >> look at that! >> beautiful

and then we're going to make, because we didn't have enough spinach, we're going to make a spinach salad and pickled strawberries >> why strawberries in salad? everybody onboard with that? >> yes, i'm for that >> we have about 45 seconds. >> so you're going to make -- >> how about the raw egg in the dressing is that cool >> it's totally fine i put an egg yolk in there, if you have a compromised immune system or pregnant, maybe not. otherwise it is totally fine. >> easter. beautiful. >> we have the apple cider vinegar. honey. >> these are all at today.com/food >> it's all about the strawberries >> the dressing is delicious >> thank you >> a little kick >> happy holidays, everybody happy passover, happy easter katie, thank you so much >> thank you, thanks for having me >> great work with the food bank in new york. woman-to-woman campaign. it's great work. a lot more coming up in the third and fourth hour of "today," but first, a quick check of your local news and weather. thank you, katie
