and we just use those dried chilies, like that. >> what are we doing next? >> every time i go to a tailgate or a party, everyone wants the chef to do something special, but i don't have the time because i'm working in the restaurant all day. what we will do here is make a brisket turnover. so i will take burnt ends, right, and i will just put them in a puff pastry and add a few things. one of the things we put inside it is a fig barbecue sauce. everyone wants to see those chef touches. this is my chef touch, right? >> fig. >> so we will take figs. >> what's the base? >> so we have molasses here. this recipe is so easy. you just put everything together, put it in a pot, bring it to a boil. >> what's that? >> the au jus. >> i would just use a beef stock. it is the same thing you get in the store. i take red wine vinegar, pour it in and then water.
8:55 am

8:56 am
>> make it like that. then we use our fork and crimp it down. >> then you put the egg wash on it? >> put the egg wash on it. >> could you make these ahead of time and put them in the fridge? >> >> that's exactly what i do. that's exactly what i do. like i said, saving time. i did it the night before and then throw them in the oven, bake them off and there you go. >> well done, chef. thank you so much. you will find the recipes on today.com/food. don't miss texans/lions battling it out on sunday night "football night in america." coverage starts at 7:00 eastern on nbc and peacock and of
