butter and some sour cream. not buttermilk but sour cream, and this is the cornbread, that savory cornbread that you love to put with your collard greens, with your cornbread dressing, pinto beans, butter beans, all of it. this is the one. and make sure you pour it into a super hot cast-iron skillet with a little oil or bacon grease like my big mama used to do and get that nice exterior, it is absolutely delicious, you can get the two different textures.>> finally, moving over to eric, and martha is here, she might taste these.>> as much as i love cheese and cream and fat on thanksgiving, a raw broccoli salad is a lovely way to cut through everything, and i have been allergic to raw apples until recently, so this is my very first raw apple recipe. but there's a lot of seasoning

that are familiar, oregano, salt, black pepper and olive oil, and what you do is you make sure the apples have been sitting outside with vinegar and lemon and just toss it altogether. the real trick, before you take a bite, cut against the grain, make sure it is really tender. so this is really the final magic. pilot on if you can. and try that one.>> this is beautiful, thank you so much chefs. look at marcus, he is just up no eating all of this. >> leave room for dessert, coming up next we are going to serve up some nostalgic favorites along with new and improved ideas, but first, this

it, i don't use that much. but we use vanilla and a pinch of sea salt. here's the key, when you bake the crust, it prevents it from having a soggy crust. a little bit of sugar and some flour before you put the filling in can help make it firm. okay, so, use a little bit of parchment paper and we've got these pie weights, you can also use these, poke some holes in it, and that is going to make sure the crust is nice and firm. there you go. have a piece of it, let's try it.>> here we come, we are coming around, we have a familiar face in this place, this goes back to your childhood, what are you making? >> this is a puerto rican desert, it is a coconut putting and it comes from the word that

means tremble in spanish and we've got coconut milk, sugar, even a little cinnamon stick to add some flavor, and add some cornstarch, you wanted to be a little bit thick, five minutes on the stove, then we can pour it over here, stir it up, and once that is nice and smooth, it just goes into some butter molds and you can do it in a large one or a small one but i love something with a little design on it, into the fridge, then you can decorate it with a little coconut on top. i love eating this with my grandmother. please taste it, it is vegan and gluten-free so it is great if you are entertaining a crowd. and i love little edible garnish. isn't that beautiful?>> that is like thick, creamy coconut pudding. oh, my gosh. she is bringing it home, we had to have a jell-o mold. >> when they said retro, and
8:47 am
debbie said do you have a jell- o mold? i've got hundreds, this is my favorite. it is festive, it is perfect. we have our hot water, we are going to use some raspberry jell-o and mix this, and we have our crushed pineapple, that is it. in order to make a pretty mold, let this sit and this is the same thing, this is just the jell-o, now we are going to do a beautiful layer, do you see it? this is it. and a little bit of orange zest, then we've got the cranberries. i love these.>> i love canned cranberries, much better than the regular kind. do you? i love slicing it.>> it is fun and tasty, when it comes out of the can, i have to admit that. so, here we are, then we pour
