i ve been at sea on the carnival breeze for a couple of days. and now that my ship is anchored in the port of cozumel i m excited to start my day exploring valladolid. one, two, three. i ll be showing you the best of mestizo culture, but we ll also be going on a little quest. you see, one of the great things about this town is its crafts. artists create beautiful textiles using traditional i ve heard that hammocks are a really big deal there and i m on a mission to find out why. if there s one thing you know about me it s that i love to dance, and that s one of my main motivators for coming all the way out here from playa del carmen on a quick one-half hour bus ride to this cute little colonial town to meet with aida who is a specialist in folklore mayan traditions. she s gonna show me the jarana dance. i ve got my dancing shoes on and i m ready to bust a

it s a savory dish made from slow-roasted pork that has been marinated in citrus juices and yucatan spices. it s served with tortillas and beans. i m enlisting the aid of local restauranteur maruja herrera and her chef chong to give me the lowdown on one of the most delicious pork dishes in the yucatan. we re going shopping in the valladolid market for ingredients then back to maruja s restaurant for some cochinita pibil 101. banana leaf. you don t eat it, it s wrapped around the pork keeping it moist like tin foil, and adding just a hint of banana. and in order to give it a kick of flavor we need a habanero pepper and a couple of spices; one roasted for flavor and the other, annatto, is there to give it a burst of red.

and i think that s why i m so excited to try this one. what are the steps of your cochinita pibil? how do you make it? maruja: it s about the ingredients. pork loin, all of the spices. they marinate the cochinita in the annatto sauce. they tie the meat, cover it altogether with banana leaves and let it sit so that the ingredients have a chance to really dip into the cochinita. is going to be cooked. before the oven was introduced to this part of the world it was done in a pit under really hot stones and banana trunks and charcoal. once it comes out of the oven it s ready to eat. wow. josh: speaking of. this looks awesome.

. josh: today we re exploring the town of valladolid, mexico. with so much to see i ve rented a bike and am touring the town in style. wow, it doesn t really take a genius to realize that this part of the world has a little obsession with hammocks. i ve never seen so many storefronts just loaded with really cool handmade hammocks.

off to meet a local tour guide named vivyana. we re gonna meet her at the zaci art center as the great hammock quest continues. vivyana: okay, this is the center of zaci where the local people sell the hammocks and other handcrafts. josh: yeah these are cool. vivyana: here we have one. like you can see with different colors. josh: so i love hammocks, i got a thing for them. so in the states, you know, people that have have a hammock as like a leisurely thing to lay in. vivyana: in the mayan houses most of the people, they don t have beds. every person in the house, they have their own hammock. josh: so there s still people today living in the traditional lifestyle. vivyana: yes. josh: they don t have beds, they only have hammocks. vivyana: and do you know why? because here we have very hot weather. josh: yes, i m sweating right now. vivyana: so when you sleep in the hammocks it s very fresh.

. josh: before we head back to my ship i want to take a few minutes at the catedral nuestra senora de la asuncion to reflect upon my day in valladolid. you know, everywhere i look there s so many elements of modern city life but it s not hard to imagine what village life was like for the spaniards i mean there s pastel stucco buildings everywhere i look and they re on top of these super narrow sidewalks that kind of frame these cobblestone roads. it s like a blast to the past. valladolid is deeply mayan and distinctly spanish. it has this welcoming presence that is it s not pretentious but it s still sophisticated.

narrator: it s early morning in the yukon and dr. oakley is on the road headed 2 hours east towards whitehorse, home to the yukon wildlife preserve. michelle: i m gonna be working on one of the more dangerous animals at the preserve, a muskox. we ve had a couple sick muskox and one actually died last year and we re still trying to figure out narrator: while the search for more clues continues, dr. oakley is checking out some other members of the herd, including a 700-pound bull. randy: hi michelle. michelle: hey, how s it going? muskox for today? randy: yeah. they just wanted to do some follow-up tests on him. michelle: randy is the head man here. he knows the safest way to do things. narrator: before dr. oakley can work on the

fight for breeding rights to the cows. michelle: they re grumpy because their hormones are raging. they will charge you with the least provocation. so you have to safely get in, get them darted before they get you. narrator: for safety, dr. oakley and randy must separate the bull from the rest of the herd. to do that, they ll drive a truck into the bull s pasture in hopes he ll chase them into a secluded randy: ready? michelle: ready freddy. randy: muskox are deadly. michelle: yeah, they are really. he s like what do you think you re doing in my pasture? come on buddy. come on my pretty pony. randy: he s ready to go. michelle: oh, he s looking mad. oh, here he goes. randy: okay. michelle: is he coming?

oh come on buddy, he almost followed us. narrator: the bull stops just short of the gate. michelle: ah! randy: silly. well don t close the gate. michelle: come on buddy! don t make this difficult, just follow us. come on buddy. oh, he s right on us, he s right on us. randy: yeah. michelle: perfect. michelle: well done. narrator: now dr. oakley has to sedate him. to avoid injury, she ll be using a blow dart. but with only one shot to administer the sedative, dr. oakley needs to make it count. michelle: well he s coming, he s coming.

the pen. a change of tactics is in order. they ll approach the muskox from outside the pen and try to land the shot through the fence. michelle: come on buddy. randy: perfect. michelle: yep, it s all in. yes! so the muskox is down. the first thing we need to do is make sure that he s staying down. we only want him down for about a half hour, 40 so we got a lot to do in that time. narrator: the muskox that died last year had liver disease and a shriveled kidney. to ensure this animal is healthy dr. oakley must feel his kidneys through the intestinal wall. michelle: i m trying to find his kidney. okay randy: does the kidney feel fine? michelle: oh, that kidney feels good.

trimmed. narrator: big guy is a blue and gold macaw and can live up to 50 years in human care. michelle: hey sandy. sandy: hey michelle. michelle: we re here for your beak and nail trim. sandy is both an amazing tech and an amazing pet owner. i don t think she s ever turned down an animal in need. looks like he s got a fair bit of growth on that one side. sandy: he does. the one side really needs some attention. michelle: it s not like it s a common thing that all parrots have to have their beaks trimmed. but big guy has chronic problems that we ve been trying to realign. ready? sandy: yeah. michelle: sorry big guy. narrator: an uneven beak can crack or break, causing the bird significant pain. michelle: so when you re restraining birds it s really important that you don t cover up their nostrils cause that s where they re actually breathing from.

parrots especially use their beaks for moving around, for eating. it s like an extra hand for them. and actually it s really neat, they have a special joint in their jaw that allows the upper beak and the lower beak to move independently. hold on i think he s done and we ve got a lot of improvement. working with a parrot is a little different. they re usually very bonded to one person so you re kind of coming in and interrupting that and reassuring him, he responded really well to that. he s a snuggler. i m getting the stink eye big time. sandy: yeah, i bet you are. michelle: i don t blame him. narrator: as the day wears on dr. oakley is finishing up with her last appointments when an emergency lands on her doorstep. michelle: hey. oh gus. mark: come here gus. my dog gus, an australian cattle dog, found himself

could see there were some really deep in his mouth. so best to have michelle do that. he s got a couple of deep ones. michelle: okay. porcupines are a major issue for dogs here. it s very tempting, this fat, waddling porcupine is going and they want to go get them out of their territory. and often the dogs try and grab them and then that s when they get them in their throat. you are amazing gus. let me have a look. they often try to use their paws and get them out and they can make it worse, break them off, and and for whatever reason a lot of them tend to migrate around and then come out the eye. so the sooner we can get at them the better. i m gonna try and pull what i can without sedating him. i know buddy. mark: there s this one right there yeah. michelle: yeah, are you ready my gus? huh? are you? [gus whining] michelle: i know my love.

to have a live pup this morning. jeni: i called the police department and asked when a vet was coming to town and they gave me the contact number. michelle: you must be barbara? barbara: yes, i m barbara. michelle: i m michelle, nice to meet you. this must be flag. barbara: flag. michelle: so why don t you tell me what happened. she started seeming off over the weekend? barbara: she started acting like there was just something desperately wrong with her. barbara: i mean just walking around all hunched over and just pacing back and forth. michelle: oh geez, okay. one thing i already notice and she doesn t want me to look is she s definitely got some dental issues. barbara: probably. well she doesn t like anyone messing with her face, period. michelle: yeah, it s probably sore. she s got so much tartar and buildup. barbara: oh yes. michelle: the teeth look a little bit loose. the other major issue is she actually has a really

the heart valves. dental disease is often the culprit. michelle: a lot of times when they have really bad dental disease you can get sort of bacteria and things settling out on heart valves that then make these little bumps in the valves. they don t close properly and then that blood kind of can go backwards when it should be going forward. barbara: it s not good. michelle: so we re in a bit of a pickle right now. flag is a complicated case. we need to get more information that i can get just from a physical exam. check the bloodwork, check out her internal workings and that s gonna be our best hope for helping her out, okay? barbara: okay. michelle: nicole and i will get this blood sample from her. we re gonna send those out and hopefully have the results back within about 24 to 36 hours. and then i ll have a lot more information so we can make a plan. we can have a bit more to talk about in a couple days. narrator: while they wait for flag s results to arrive, dr. oakley still has plenty of patients to see.

ay owl named aspen. brian: she s had her wing amputated. she s more than likely been hit by a car. so far bandaging hasn t really worked. she ended up standing on it and falling on it and keeping it tore up, so i m out of ideas. maybe michelle will get that thing to heal up for us. narrator: great gray owls are the largest owls in north america and fierce yukon predators. unfortunately, aspen s hunting days are over. there s a bit of a stump there, and when she gets off balance from having this one heavy wing and lighter wing and if she gets excited moving around her enclosure she can whack this. a chronic wound with constant bleeding, that s not the greatest quality of life. narrator: aspen s best hope for recovery is for the stump to heal. michelle: there we go. so look closely. look at that feather right there.

thick-looking purple shaft and there s still an artery and a vein. and when that feather is damaged it can grow in deformed. narrator: with just one wing, aspen will never fly again. but with a little creativity dr. oakley can ensure a high quality of life. michelle: i guess what i d really like to do is try to have a bandage that allows those feathers to come out and get lots of air, but doesn t allow her to damage it. the time they re not even made for dogs and cats, let alone for owls. so i have to get a little creative on what s gonna work. i ve made splints and bandages out of all kinds of things. what do you think of that? brian: yeah, not too bad. michelle: that s not bad at all. what do you think the odds are this will stay on until tomorrow? brian: better add a little tape. michelle: just watch she doesn t bump anything when

kley s clinic in haines, alaska. back for answers on their sick pup flag are owners barbara and jeni. barbara: she says i don t think i want to be here mom, it s time to go home. narrator: dr. oakley sent out blood samples to try and diagnose flag s ailment. now the results are in. michelle: how is flag doing today? barbara: well she s doing better than she was when chelle: good, that s great. okay, so what i found from flag s bloodwork is she has a really high white blood cell count. and she has lots of signs of bacteria and blood in her urine. she also has a severe bladder infection. this bladder infection fits with the symptoms. yeah, you know, she s just dehydrated. she s not drinking very much and everything has kind of slowed down and that just makes it worse because instead of flushing any bacteria out

e bacteria could move to the kidneys causing renal failure and possibly death. michelle: so what we want to do is try and flush some of that bacteria out. so what i think we could do is keep her for the afternoon on iv fluids. we ll have the fluids run through and then we can start her on antibiotics and then send her home with you at the end of the day in a few hours. would that be okay with you? barbara: oh yeah. michelle: alright. we ll see you in a bit then. so we re just gonna put an iv in. woman: ready? michelle: yep. ready. narrator: all while dr. oakley juggles a full slate of clients. michelle: oops, you got out huh? you got out. ooh, don t like your back end touched hey? we re just checking to see how much fluids this little things has had and how much more we re gonna

michelle: it s chaos. no, we re all done. a little arm wrestling. we did it. 12:15. narrator: finally after 3 hours flag has taken in two and a half bags of fluid. michelle: hi, look who s here. barbara: hi. michelle: do you guys want to come on in? barbara: oh good. michelle: you know, the magic of iv fluids, when you have a dehydrated animal and you give them fluids, you re supporting pretty much every system. narrator: now that flag is rehydrated, antibiotics should clear the bladder infection. michelle: so she ll get one and a half. we re gonna recheck her urine sample in a couple weeks and then as long as all systems are looking good at that point then we re gonna try and get her in for a dental to take care of her teeth.
