4:39 am
this morning... our job swap series continues now in the bakery. that's where the smell of dessert delights was enough to attract kron 4's spencer blake to trade places with a popular pie maker. here is what happened. "i'm spencer blake in oakland, and if i weren't a reporter for kron four news, i'm not sure exactly what i'd be doing. but baking sure does sound fun, so i'm doing a job swap with the piemakers at pietisserie.""hey! i'm jaynelle. welcome to pietisserie!i hear we're swapping jobs today, right. mm-hmm!""here's an apron. we don't want to get flour all over you.""we're going to be making a mixed berry pie.
4:40 am
we're using blackberries, raspberries, and blueberry." "grab that bowl of flour.we need a pinch of salt.or , as i learned, don't be afraid to add two."let me see your pinch. ok, when i say pinch, i mean like this.that's a hefty pinch!a hefty pinch.""ya know, if you don't put enough salt in your crust it turns out really bland.jaynelle learned the art of pie-making in high school, and opened her business with just three pie recipes.now, she has dozens, and the crust is the most pivotal part."we're going to do something that you've done before, but probably not with butter. we're going to grate it in.like a cheese grater? exactly. everybody has one of these, and it's just very easy."(nats of cheese grater tapping)"you wanna toss that almost like a salad."another trick is to incorporate ice cold waterjust a little at a time.until the dough starts to feel just right."i'm gonna show you how hard i'm squeezing this dough. may i grab your hand?yeah, that's fine.like that.so i'm being a pansy, basically. i need to squeeze a little harder! (laughs) yeah!""ok, while
4:41 am
that's chilling in the fridge, we're going to go ahead and make our pie filling."which is so much easier than the crust, and much faster, too. (nats of stirring).after a lesson on frequent flips and rotations, we put the dough in the tin, filled it, topped it"so there's no way i can mess this up then.no way.i don't know, i could surprise you!"and gave it an egg wash.and forty minutes latersweet, flaky dessert is served."okay, you literally made a perfect pie. you think so?i do.could you sell that?alright, so i'm hired then, right, for the swap-a-job?yeah, they're gonna need a new reporter.maybe you could do it.""i'm i standing in an okay place?i'm so curious about where your day takes you, reporting the news. well - hey, that was great, by the way - we could be all over the place. i'm general assignment, so i could be in san jose one day and marin county the next day and concord the day after that. given that you're reaching so many people day after day and you're talking about light things to serious things, do you feel a sense of responsibility doing that?i try to! i like to think that i
