8:48 am
we're going to kind of go into that today. about those common compounds. so number one, ages he's or this is this is an acronym for and van slyke haitian and products also known as toxins, then also h cea's ph is and also acrylamide. so starting with ages, ages accelerate the aging process and it's linked to the increased risk of dementia as well as other diseases as well. so ages, it's also linked to we talked about this, the clogged arteries and how that has an effect on on your brain health, as well as your heart health. and then type 2 diabetes. and circle pino. we talked about that a little bit last week to how most tackle kenya is the loss of muscle. all in all ages have a
8:49 am
debilitating effect on the aging really trying to reduce the intake of ages just just as a side note ages you, you can get the formation of ages from the food you eat. so it's as well as it's a reaction that takes place when you eat sugars. foods high in sugars as well as they are formed when you cook them a certain way. so what is that certain way when when you're cooking ages? cooking at high dry heat. so the broiling, the barbecuing, the air frying roasting grilling, all of those that the things that many people love to do. yeah, it's yes to has to be den in moderation. and the more that you know, and you're familiar with, as you might not maybe grill every night, but maybe do more steam cooking. so moist heat is actually the
8:50 am
best way to to avoid the agent is so still stewing and a suit being putting things in soups a steaming and poaching are the ideal way to prevent those agents from forming lot of people who just bought their air fryer. not too happy. i. hey, this came up yesterday. that's why i'm bringing it out. was saying, oh, i love my air fryer. >> okay. so so that's how make sure that you >> create ages. there's the other 2 that you spoke of as well. >> hca s and p 8 ages, right? so the hca, those these are the cyclic and means and their farm when. >> muscle when meet mates heat. so think of especially the barbecuing when your heating food at high heat and whether grow sting in the oven or in the air. fryer, this can occur so really being
8:51 am
concerned with maybe cooking your meat at a lower temperature, anything lower actually they start forming after you cook at 300 degrees and above. so on its tow, that's about a medium setting. you want to really be cognizant of how hot your cooking your meat and the pa ages. those are formed like on the barbecue when that the juices of the meat and it's a start dripping on the hot grill and then you'll see that smoke coming up in in that attaching to your maybe some people like that smokiness of the barbecue. but those are the pa ages and these 2 compounds are associated with cancer. any type of cancer like it could it could manifest itself in any types. are there specific types? many, many types of cancer actually from some utero prostate. so should just be
8:52 am
aware of the the association with cancer and then also when you're cooking on a charcoal grill that that he can get up to 700 degrees fahrenheit on a gas grill anywhere from 2.50, to 5.50. so it still gets up there. when you have the setting high. so you really want the air fryer that gets up to 482 degrees. so that's also can a high heat if you have it set really high. so keep that heat a little lower key. the final one acrylamide did i say that correctly? what so acrylamide is this is land starch meets heat. these are things that like the pit potato roasted potatoes that are cooked at a high heat, pretzels. and when this starts meets heat, it forms a chemical reaction called the maillard reaction which is quote, unquote browning. and
8:53 am
and when you probably have seen this chemical reaction take place when you put doe inside the oven, let it bake for about 15, 20 minutes and voila, you have a cookie had. that is that is the reaction that takes place to cause it to get caramelized in nice and brown. so you're saying i can't action be eating cookies to a minimum. so the more that, you you know >> what these things can do and how certain foods it's not only important to pay attention to the foods you eat, but also how you prepare them. okay. well, as all of this, of course, i know is outlined in your book, athletes in aprons. it's available on amazon as well as on your website. karen owoc dot com, karen and have to really go back and look at my diet. >> my diet and and play my meal planning and what not to really take into account all

>> well, i know drink services the full schedule is pretty much now running right? >> yeah. we brought back are full our full actually a little bit more. and then our full-service. we changed our service plan a pretty dramatically about 8 months ago to respond to what we know is a brand new market for ferry service. we know that 95 commuters still a slow to come back to the office. but shift workers are going into work and need to travel. so we added more off service more weekend service to respond to that in its work. and we've seen ridership return a lot more dramatically than some of the regional transit systems to the ferry. >> well, it's always a fun time to write. very that's especially on a day like today. it's absolutely beautiful outside. i know you held a virtual meeting last week to try and get some feedback. what's that the by then like so far in terms of riders and why was it important for you guys to do this and get ridership feedback? >> yeah. as you might expect to be, people want to keep the
