7:15 am
everybody. we're still going to keep the summer heat spike kind of with us. we're kind of shaving away in a little bit. but in some of those spots, well inland, you're going to get up to close to the double-digit or triple-digit. if you don't get their awfully close around the upper 90's, definitely. >> there's the east bay shoreline. you can see some of this kind of high cloudiness that we're going to deal with both today. tomorrow, actually not so much at night, but store in the day. the concern is this is kind of the monsoon away because it does sometimes bring instability and that sometimes problematic. here's what we're talking about today. scattered clouds, and low 90's. well inland, a couple spots will make the scene note or a couple degrees better near 80 for the bay early into the week. we've got the variable clouds working in here, 90 ish or so well inland. that's basically going on monday that a big drop happens after that 0. 70's already for the bay. and then later on the week, sunny, not so hot. 80's start to happen well inland and 70's going on for the bay. let's go for right now. 77, we've got all the 60's working well, east bay. we're already off to a

stuff. so these guys are are as light as we count. super fine. >> so what inspires in creating your menus? and do you guys mix it up or is a pretty consistent and yeah, what what strikes you when you're trying to create your menu? sorry. i mean, you know, a motive california from new york city. so, you know, i i was excited about ingredients. how here for but get your hands so just cover these guys. and then they sit overnight like until all that flower just kind of naturally absorb it. but really the farms that we use our inspiration and, you know, being in california, it's, you know, is going to be california for 2 years. and that was 15 years ago. but, you know, be able to pick, you know, such amazing produce like this. so we work really closely with the seasons. and really that product is is our inspiration, you know, throughout the year for the menu. so bring a lot of different technique from our team, their backgrounds and their aspirations. so next up here is we're going to take these guys, which we put in their last night hopes to grab
9:48 am
a brush here. and this is this is the fun part is just kind of feel come excavating. it's kind of soothing. you do this for a, you architectural work here. so we take these and then you can see it's just basically going to be a little. around. dawn can feel how in from end of the flower absorbs the moisture and then we take these and these are the ones that we brush so this one changes seasonally this dish that will basically maybe do a mushroom and truffle in the wintertime. maybe do some peas in the and then really everyone waits for this moment where, you know, the squash blossoms are back. so usually that's kind of late. late spring, early summer. so just you can grab a couple of these guys here. i love that. we're working with flowers. so, yeah, you know, you're going farmers today. did soldier in these guys we actually take the little steam in here and we make an oil with that. so part of what we do is really trying to utilize like all the parks of the of every product
9:49 am
that comes in. so the little leads that come in use as a but for this will take the flowers. this is kind of my mindset moment before service every night. so i'm going to give you one here. we're just going to put these down the natural she's a way so that will be years. i'll take this guy here. and then you can take like 2 and then you're going to kind of come from the side. just like a little christmas present here. so it's second wrapping. well, this one should be okay. thank you know, you can do so then you just kind of be this little tail in there. and basically as it cooks, it's going to scheme pulled over you're doing pretty good there. i don't know. i think you're being quite polite. for first i've done i don't know. maybe 10,000 nothing. you can eat pollen. yes, i mean, we we basically just use it. you can see the color in was put a little bit in this poll here. but you can see has this really like gold and beautiful color there. so when we pour
9:50 am
the sauce and they're kind of lifts that you get sort of that sparkly gold, look to it. so here we have basically these these 3 little guys. so do is we'll put them in our steamer. and basically these guys just gets team for about 4 really, this dish kind of speaks to sort of our our entre at the russian was really just, you know, being respected ingredients, having them be our inspiration and then really sort of the idea of refined simplicity. so reintroduce technique and the idea but the final product is it's very simple, but very elegant. so after we steam on for about 4 minutes, you can see just kind oh, wow, look at that color. the color just brightens, the kind of wrapped tightly around them. and then this is favorite pick up during service. because all we do is. take them steam and said i'm in the within u.s.. yeah. so it's it's kind of nature's painting, if you
9:51 am
will, just really simple. totally. it you know, everyone when they get it, it just like it has a moment of like show you i just stare at this for a minute. and then the last thing we do is at the table. we pour a little sauce will basically be made to me the water with basically kind of a gas, but joe style. so we take cucumber tomato, red onion. many thought let it sit overnight. we spend that, you know, in a food processor, let it rain. we get this clear liquid and then all the ryens from the partners on makeup artist on water. yeah. and basically that gives to to liquids. we combined. we clarify it's a over. this is very unique. yeah, i'm quite impressed and can't wait to come visit where exactly in the napa valley are. so we're and just south of seen alina. so really dead center in the napa valley. so if you're driving up, 29, which is the main artery through, there were kind of right there on the left-hand side. and what more can people look forward to if they visit? so we have a prefix menu, which has a lot of different options for guests. kind of choose your own adventure, if you will. and then are our signature tasting menu. so about,
