>> it was a long time ago. 65 pounds many, many years healthy eating that i got into this knowing that not flavor. i believe that's not true. i went to thailand and i saw flavors that were incredible. this is over 15 years ago. it took me on a path into creating healthy menus. i got together with cascade hospitality. they're very big in minneapolis. crave. they're in austin and all over the country. vegas in summerlin is a wonderful place. but the concept of crave is a really nice one. it's about a menu that's extensive. it's sushi and steak and it's all a scratch kitchen which means everything in the morning starts from scratch. there is many restaurants that don't today. everything is bottled up and sauces are frozen. everything is from scratch. it's an exciting menu. i think there is a choice for everyone. we've got sushi, steak, mac and cheese, burgers. the nice concept. and very affordable.

everyone will be satisfied. >> it's creating people, getting a menu for everyone. i've got some scallops and my real passion is bringing the fat down, the carbs down and protein up. i think that's what i love about sushi. >> this is the titanic. it's not going to tip over. but my goodness. this is one of your sushi bowls? >> this could probably feed about five people and that's $20 a head. this is one that everyone is instagramming, taking pictures of. >> this is serious. >> it's a really nice area. downtown summerlin has got a really nice feel. they've got a family feel. a real kind of local community. they've got a farmer's market every saturday. and crave has done great specials. tonight they've got half price wines. the menu, sampling some of these things, i think people are really going to like it.

boat is heaven forbid there is a flood, you could sail away. >> it's big enough. >> it's very exciting creating menus because the restaurant crave, they get the idea of people want to go have a really healthy lifestyle as well. everyone. so what we want to create is this big diverse menu that mixes all of these kind of collaborations of cultures. i'm doing this korean beef. this beef tartar. it balances together the japanese and american steak and then this fusion of everything going on. i've got red wine and cook down some onions. this creates a little bit of a carmelization. and the scallops. i put a little bit of olive oil. that's the way we're cooking now, a tiny bit of oil. the tip is coat the food, not

then this looks like a potato. it's a lot less carbs. it's got this creamy texture. it's really amazing. restaurants say this. our diet. we go to a restaurant, we say there could be nothing for me that's healthy on this menu. stuff is phenomenal. >> and it tastes great. that's the thing. we want people to come down to meal. oh, and by the way, if i chose some of those options, they happen to be those options that were really good for me. that's what we're trying to create. but obviously it is about taste. it's got to be absolutely fantastic food. so that starts with the ingredients. when you've got scallops like this, oh, my goodness, you're never going to go wrong. when you got scallops of this quality, then you'll have a beautiful tasting meal. i sometimes find -- i don't know if you do -- in a restaurant, more is more. and then you'll see a halibut and it's got a crust and this and that. by the time you finished it, it actually isn't really what you you wanted. it's nice to have really great tasting flavors.

sushi and the steak married together, you'll get that from crave. >> do you have to have reservations or can you just walk in? >> tuesday is a great night because they do half price bottles of wine. sunday social security a great time with brunch. saturday night, i would definitely book reservation attention. when we do like valentine's day, there is really great specials. what we like about it is it's very affordable. er you can go and have really nice place, appetizers. things that will open a lot of people -- it doesn't have to be an occasion to go to crave. it doesn't have to be this wait for a saturday night. if you feel like you need break and some time out, go to sample the menu. have an enjoyle meal and it will be one i think you'll love. >> you're about to plate the scallops. what's the rule of thumb when cooking scallops? i genuinely think i make them into rubber. >> we're almost there. >> you got 30 seconds.

eat pizza with real cheese on it. i'm not a vegan. i love plant-based food and i love -- i'll give you an example. i have a banana here on the screen for you. it's a snack, right? 100 calories. simple, everyday banana. right next to it you'll see on the monitor there are nine potato chips. and shockingly, both, and i mean both equally are 100 calories. your body, if it eats nine chips, it's going to store it away. it's mainly all fat. versus a banana, it will help you digest food, be good for your digestive system, 19 cents for one banana. versus if you buy a bag of chips, you're spending 4 or $5 for the ago and probably will eat the whole bag, unfortunately. and eat nine to 1,000 calories. it's about making these smart, i call them calorie swaps that give you more food for less

>> just even that slice of pizza at any point is 300 calories. >> i love pizza. i have two boys. 11-year-old and nine-year-old son. and my partner and i make pizza night at our house. a lot of people in the country do that as well. but guess what we do different at our house? we get -- everyone gets a full size pizza for 331 calories and it has cheese, pepperoni, mozzarella. has everything. the only thing we do to swap it out to lower the calorie count is we replace the base of it with cauliflower. it drops it down so instead of having a slice of pizza or two slices for 3 or 400 calories, what you can do is you can have the whole pizza for 331 calories. and if you look at the picture on the screen, we're talking a big pizza. this isn't like a little baby personal pan. so that's what tiny and full does. it gives people over 50 recipes that they can make at home with foods they already have on hand.

>> this is such a fun events do you every year. can you tell us all about this for people who are not familiar with it? >> go ahead. >> basically we invite people to bring their cars and actually drive on the super speedway, the same track that the nascar drivers drive on. and this year -- last year was the first time we had it under the lights. so you can drive under the lights as well. so we have car club, people that bring out their souped up cars. we've had rvs, tow trucks. we've had ambulances, model t's. we've seen it all. it's really a great event. a lot of fun. >> 1983 chrysler station wagon. >> we had an rv with a teddy bear on the top and he called it his man cave. >> so cute. i was south there about five years ago and it feels like you're going to fall -- when you bank. but you don't and it's so much fun. it's a different experience that people will never be able to do unless do you this. >> correct. >> and what is the cost to

cars that come out. >> horny mike from counting cars brought the horny bus out. charities. explain that. >> speedway children's charities benefits anybody locally here, any charity that benefits children, whether it be social, medical, whatever they need. we give away -- to 55 local charities, we gave away $257,000 this year. 100,000 more than last year. this is up with of our biggest events that we have. >> the big charity that gives to all the other charities. >> we're the charity's charity. >> all for the kids. >> people cannot make it, can they make a donation directly to you? >> absolutely. go to our web site, seclas vegas.org. they can make a donation to the charity and in the coming months, this is our big season. we have the laps for charity event and coming up nascar

auction, nascar memorabilia auction, as well as our track walk the day of the nascar race. >> awesome. you mentioned speedway under the lights. what time does it come under the lights? >> right about 4:00 o'clock. it starts to get a little dark. we'll have the lights on. right around 4:30 when it's typically just about dark is when we really get going under the lights. many people know that not even a nascar guys drive under the lights on the track unless there is some type of weather delay or something like that. >> just a cool experience. >> it's really a once in a lifetime experience. unless you come out to do this event, you won't have your car on the super speedway. we encourage everyone to come out and give it a try. >> do you need volunteers? >> we do need volunteers. if you're interested, you can go to scclas vegas.org. you can contact our director. she's also looking for volunteers for that weekend. >> tell her we said hello. thank you. >> thank you. >> thanks for having us.
