[cheers and applause] dr. oz: you're always asking me is it ok to eat this or do that? today i'm solving your daily food dilemmas. here to helper three top food experts. big daddy aaron mccargo jr., host of "big daddy's house" on the food network. chef and owner of new york city's award winning restaurant and registered dietitian francis roth, best-selling author and nationally recognized health expert. first up a tweet about moldy food from sabrina. she asks -- dr. oz, is it ok to cut the mold off food and eat it? panel, do you think it's ok? what do you say? they're conferring. little debate going here. here's the vote. the vote is -- hold up your votes. consensus to ok.
3:43 pm
big daddy, why is it ok? >> look at it this way, if it's anything soft, you don't want to mess around with it because the mold will penetrate f you're talking about hard cheese, it's ok to cut the cheese off. just stay away from the mold. i like to use the tip by dipping your knife in flour so you get easy cut. cheese won't stick to the knife. flour, cut it, not close to the mold. dr. oz: love that idea. let's go over why this is right. i will show why you big daddy i think is absolutely on target. mold, here's a picture of mold, it grows like a tree on the surface. top part that has roots that grow deep whatever it's growing into. you see that moldy structure, have you to be cautious. for example, big daddy mentioned cheese, right? look what happen when's you have mold on cheese f it's hard cheese like this, you've got the mold that's growing there. take your knife in flower. cut it down through there and when you do that, chop to the bottom and guess what happens? there's no mold. guess what? is the mold can't penetrate through the hard cheese. mold just spreads along the

surface sofment if you're one inch from the end, you have a piece of cheese that's just as good as nil. bread is a different story. bread is much softer. mold roots i showed you earlier can penetrate. take your knife. this time, flour and cut through there and what do you find? microscopic threads of mold. roots growing into the bread. this stuff could make you sick. you can't just save it off. toss the whole loaf. good rule of thumb, if something is hard, like hard cheese or veggie, cut it off and you're good to go. give yourself an inch of margin. if it's soft, i don't care what it is, yogurt, bread, toss it. make sense, everybody? all right. next up, youtube video from lisa about cookie dough. >> dr. oz, i want to know, is it ok to eat the cookie dough? dr. oz: if you could lick the cookie dough. panel, what do you think?
3:45 pm
all right. we've got, ok, ok and undecided. why is that? >> well, here's the thing, if you have batter that doesn't have rye in it, egg, fine. go crazy and nuts, lick it. but when it has raw egg, there's a chance for salmonella. now, if you crunch the numbers, and there's only 1 in 20,000 eggs that is actually going to be contaminated with salmonella. that means it would take you probably 84 years to come in contact with the egg that has salmonella on it. so ultimately, i'm going to say it's ok. dr. oz: we have three oks. >> small licks. dr. oz: i would have had a revolt in the audience if you couldn't lick batter. you have to lick batter. one caveat, pregnant, immune compromised, very young or very old, usda recommends against eating raw eggs at all. 1 in 20,000, risk is too high, to could develop life-threatening problem. everyone else gets to enjoy it.

our facebook question from jackie. she's worried about leaving foods sitting out. here's a question -- dr. oz i'm having a party buffet style. is it ok to leave my food out for three to four hours? maybe the biggest question of all, let's take a look, panel. what do you guys think? >> can't roll with that. dr. oz: unanimous again. 3 schamus, take it away. why is it not ok? >> in the restaurant there's something called danger zone. anything between 40 and 140 degrees. there's bacteria everywhere but in the danger zone, that's where it multiplies and grows quickly. you have to move it through danger zone quickly, as quickly as you can. if food is in the danger zone for more than two hours, then bacteria will multiply and bad situation. so when in doubt, throw it out. dr. oz: fridges have to be colder then 40. heating up more than 140. anything in between, two hours? >> two hours, yeah. dr. oz: let me show you why this is so important. ly give you a picture of bacteria here. this is listeria. common bacteria these days. every 20 minutes the back dwreer

is in the danchinge zorn, schamus mentioned earlier. it doubles. this little bug interestingly will not get you sick right away. it might take weeks. up to two months to get sick after eating this. that means you're never going to know if the cause of what made you sick was the food you left out two months ago for a little too long. so i think that will rule of thumb is smart. more than two hours, throw it out. thank you very much my guest-perts. coming up -- move over rockettes. kick-start the holiday season by dancing off the pounds. that's next.
