♪ we're back with more of "today" on a monday morning, the 12th day of march, 2012. it's been somewhat of an epic morning on the show. we have one of the biggest crowds we have ever had for a concert out on the plaza. we have one direction joining us this morning. they are back joining us for this open. has this lived up to expectations? >> i think we're just so grateful for everybody coming out to see us. it's amazing. we never dreamed of performing on a stage like this. it's amazing. thank you very much. >> i understand you will be in new york city or at least in the united states for another week.

killing spree in southern afghanistan shooting 16 civilians to death and burning their bodies. president obama called the attack tragic and shocking and said he'll hold accountable anyone responsible. the alleged gunman is in custody. officials say he acted alone and surrendered after the attacks. in afghanistan, locals are expressing doubt that a single soldier could have carried out all the shootings. a deadly accident left a school bus driver and a student dead in indianapolis this morning according to wthr, the nbc affiliate there. ten others were injured in the accident. the bus was transporting children to a local charter school at the time. mitt romney is rising in a few alabama polls with just one day before the republican primaries in that state and in mississippi. rick santorum won saturday's kansas kcaucuses but romney picked up the most delegates overall this weekend. violence along the israeli/gaza border is on the rise after israel's killing of a top

palestinian militant sparked the worst fire in months. 21 people have been killed by israeli air strikes in the hamas ruled territory of gaza. one million israeli civilians near the border are on high alert for increased rocket fire. a 19-year-old student is in police custody this morning charged with threatening a massive shooting rampage at the university of maryland campus. police say alexander song posted online that he would, quote, kill enough people to make it to national news and warn people to stay away from the mall. song was unarmed when he was arrested sunday. madam toussaud wax museum is defending a display of ann frank. some call it inappropriate. the figure along with information about her ordeal hiding from the nazes serves as a three-dimensional history

lesson. "the lorax" was the film to beat but no one could. the computer animated classic took the top spot with $39.1 million. "john carter" was in second and "project x "was in third. an alaska beauty contestant proved she's already a winner when she had her head shaved to show kids with cancer that bald is beautiful. she even let a young girl battling leukemia join the clip-a-thon. she will not wear a wig when she competes in the alaska state pageant in june. who says penguins can't fly? these guys go first class. two penguins traveled from san antonio to atlanta when the captain allowed them to get out of their cages and stretch their very short legs. the passenger who shot this video said it was the first time he's seen everyone on a plane smiling at once. something about penguins always makes us smile.

that's your latest weather. savannah? >> al, thank you. this morning on today's money, boosting your home's value. there are things you can do as a seller to get the best appraisal for your property. vera gibbons is here with a checklist. >> good morning. >> this is a make or break issue. >> it's a convoluted process. it's more complex, more regulated. the changes happened a couple years ago when the appraisal management company took over the process. appraisers aren't making as much money as they used to. a couple hundred dollars. they are expected to do them in unrealistic time frames so you are seeing the skilled, competent appraisers leave or move into more lucrative areas.

consumers are paying the price any number of ways. >> it's the lender's requirement and the borrower has to pay for it but it's important to the seller. >> very important for people doing a refi, too. unfortunately you can't pick your appraiser. it comes from the third party management company from the clearinghouse. but if the bank is holding your loan directly you can say, send me someone state certified, someone with skill. >> you can't pick the appraiser but you have say over the quality? >> in some cases. if the bank is holding the loan directly you may have a little bit of say. you want to say, are they designated with a professional organization? you want someone who knows what they are doing with your home. >> next are the comparables. this is something that feels mysterious to people. >> this is the most important part of the process.

long before the appraiser comes to check out the condition, inspect it, pull up comps. these are homes that have recently sold over the past six months comparable to yours in terms of age, size, condition. start your research on zillow, for example, for a general feel. you have to take the initiative here. what's happening is some of these appraisers are using outdated comps or comps from a different zip code. make sure it's apples to apples, oranges to oranges. in some cases it's not. what makes your home different from the comps. do you have the best view on the block, a bigger yard? other things to distinguish your property and increase the value. >> you suggest a stack of comps in hand to the appraisers. >> you don't want to offend them, but do so in a respectful manner. they said they won't be offended. it shows you have done your homework and you want to be sure you get the right assessment.

>> if there was a sale that didn't involve a real estate broker -- >> ask around. ask your neighbors, real estate brokers. obviously all the information is generally out there. it's public knowledge. they may know of a house down the street that wasn't in the multiple listings service and sold for a decent price. you could tell your appraiser about that as well. >> a big question is should i make home improvements to boost my value. >> the experts say not in this market necessarily. but if you have done them it's something to point out to your appraiser. look, i added energy efficient windows, new insulation, a new heating system, new a/c, central air. these are value added things i have done to increase the value. you can present a list along with the costs associated. similarly, if you have a

finished basement, the extra half bath not detailed in the assessing records, tell them. they may not know about this. that will increase your home's value as well. >> how long should the process take? when should you get the appraisal back and can you appeal it? >> it takes a couple weeks. you have to go to the lender and ask for a copy. most lenders do have an appeals process. you have to show there was an error, an omission. you can't go in and let your emotions -- that won't work. you have to have the evidence to back it up. >> thank you very much. coming up, when what you eat turns into an obsession. we'll help if this is a problem for you. later on, springing into the warmer weather with bright hues and bold accessories. that's coming up after these messages. sorry. sore knee. blast of cold feels nice.

this morning on eat smart today, food obsessions. food can be a friend and an enemy, but what if what you eat affects how you act? it may be the sign of a serious eating disorder. gail saltz, a "today" contributor and psychiatrist join us. >> good to see you. >> what are you talking about with a food obsession? >> it can be normal eating and you start to focus on certain foods and make different rules. you start to have a level of anxiety when you break the rules or something bad will happen. >> i would add when we say obsession we mean a thought that's stuck in your head that goes around and around and takes up time. you feel you have to behave a

certain way in response. for instance, if i do this or eat this or too much of this or not enough of this something bad will happen. so i have to behave a certain way. >> we have a list of obsessions. for example, excessive calorie counting. >> that can start out normal. when you focus on it's a good or a bad food because of the calories and i will break this rule and go over calories, i'm a bad person, i will get sick, something bad will happen. it can affect your social surroundings. we are most concerned when people are thinking about it so much they are socially isolated. they don't go out with friends. they don't like people telling them, you're acting oddly with food. >> you don't change the variety. >> people will be like, i have to have a bagel every day of the lunch for a year. nothing but a bagel. >> some people use it to control. in other words i will have a piece of salmon, that's it. >> right. if you say, today i will have salmon, tomorrow a salad, that's one thing. if you can only eat one kind of food all the time.

>> that's obsession. >> of course it could be unhealthy. you're not getting nutrients and the foods you need. >> structured eating is good. but when it crosses a line to restricting other foods, you become nutritionally deficient and anxious. >> people can't have food touch each other or eat food in a certain order. >> it creates anxiety or sometimes food is thrown away. they eat nothing. >> it's common. you would be surprised. when it's about food not touching each other or eating in a certain order you think more of obsession compulsion than an eating disorder. it has to be counted. it can't touch. things like that smack more of ocd than eating disorder. >> people who look at single foods like a miracle. >> i will only take juices. i only have raw foods. this can create nutritional deficiency and anxiety if they eat the wrong foods.

structure is good. everyone has quirks and food rules. >> any of these things could be okay in small doses. it's when it affects your functioning or relationships that we say it's an obsession. >> you want to break the cycle. how do you do it? >> you're recognizing that this is going on. we are speaking to you out there. if you notice, oh, wow, i really do this stuff. then you have to challenge yourself in baby steps. >> make little changes. >> like, okay, i don't like my food touching. okay, if my food touches, nothing happens. small steps. not saying i will add a hundred foods. >> if you overwhelm yourself you won't do it. >> like any habit, baby steps. >> a little bit at a time where you are a little bit anxious. >> set realistic goals. >> do it in a safe environment with a friend, family member, socially or something you know that is a realistic goal and not

too hard. >> when do you seek professional help? >> say you try this and put the things together. you go, i can't do this. this is overwhelming and you see it is affecting your life. you should probably seek help. the truth is you can't treat yourself with an eating disorder. if you have one, you need help. ocd also, you could challenge yourself if it's not too bad. if it's a big problem, you need help. >> there is no shame or embarrassment in this. you can't overcome food. >> get help. >> and they are treatable conditions. they can ruin your life if not treated. >> anything wrong with weighing yourself every day, morning -- >> that's a good thing. >> however. >> two to three times a day or i have a bad day if i don't like the scale. >> or you can't -- >> somebody has a talking obsession. blah, blah, blah. thanks so much. coming up, a performance by the pop group from across the pond, one direction. first, these messages. this morning in today's kitchen, we are learning how to be a better home cook with chef bobby flay. he's teaching us to master the classic steak and potatoes dinner. bobby -- >> sir, how are you? >> i'm good. >> i have been doing cooking seg is meants for years. when do i something fancy or gloss over it, sometimes people don't see what we are doing. my wife says, give me five dishes i can do. a steak dish, chicken, pasta. >> right. >> we'll start with steak and potatoes. >> this is the go-to. >> steak and potatoes with few ingredients starting with a strip secretary. >> -- steak.

>> why? >> i like the flavor of it. this is a nice choice steak which you will find in most supermarkets. i like a lot of salt and pepper on both sides. >> can you overseason it? >> it's tough to do when it's this dense. put more salt and pepper on it than you think you need. you need a lot of seasoning to run through the dense steak. we put it in a cast iron pan. if you don't have one that's fine. i like cast iron because -- >> they're cheap. >> and they last for generations if you take care of them. >> i have my grandmother's. >> i'm sure it's perfectly seasoned. >> it is. >> that's what you want to see, al. >> ooh. >> i get the crust because of the salt and pepper. not only does it add flavor, it adds a crust on the outside. >> you will cook it on both sides and put it in the oven? >> or turn down the heat and let it cook through which is what we did.

i will start with the potatoes. these are yukon gold potatoes. we'll put them right back here. mashed potatoes. three ingredients. potatoes, butter -- >> that's a ricer? >> butter and a little bit of scalded milk. salt, pepper, that's all you need. some people like them to be smashed potatoes. you would use a masher for that. this is known as a ricer. we'll just rice them. >> why do you like it? >> it's nice and smooth. cook the potatoes through. this way they will be creamy and that's key. scalded milk so it's the same temperature as the potatoes. the potatoes should be warm. butter. we're going to emulsify this. sorry. i didn't use all the butter there. >> come on. >> a little salt and pepper. gently mix it up. i will let you do it. bewe eel get to the steak. 135 degrees to 145 degrees with a meat thermometer.
