this morning in "today's" kitchen, what's on the menu, a taste of spring. we are using the freshest ingredients for a surprise take on an old recipe. it's good to see you. >> hi. >> with this warm weather, you want to use these springy vegetables. >> exactly. i brought my favorite spring ingredients. this is a twist on pesto.

this is arugula. i like to use baby arugula. it's not aggressive. >> what's the first step? >> we have the arugula in here. i'm going to hand you these. this the baby spinach. i like to use it to mellow it out. >> dump it in here? >> yeah. >> the whole thing? >> yeah. this is dump and cook. >> what is that, lemon juice? >> lemon juice, toasted pine nuts, garlic. >> two cloves there. >> now, we are going to -- if you want to grab that peber for me. >> pepper. >> a little fresh ground in there. >> put the oil in there. >> we are. we are going do that as we pulse this. actually, i'll do that. you want a nice even stream until it starts to incorporate. like that. it's chopped up like that, then

take it out of the bowl. we have it done here. stir in cheese and lemon zest to give it zing. this is parmesan. use your favorite. now, we are making meat balls. >> these are nice minimeat balls. garlic, parsley, the usual suspects but we have three types of meat. here, this is my secret weapon to make sure everything is nice and even. so, scoop it out. they will cook consistently, they are nice and even. roll them out. who doesn't like to play with food, right? >> roll them in flour. >> a little bit of flour and pop it in a pan. >> great. >> let them saute up eight to ten minutes until they have a nice crust and they are cooked through inside. >> you have roasted tomatoes. >> yes.
