>> and, again, cost, anything to do with -- >> cost has a lot to do with it. you can spend -- and the relative cost of wine is almost irrelevant. >> mm-hmm. >> so you can spend $50, $100, $200, but my rule of thumb is that a responsible restaurant should be able to provide you a good bottle of wine for about the price of an entre and the great bottle of wine at two times the cost of an entre. another tip. go to a steakhouse, stay away from napa valley, cabernet or sauvignon and go for something more obscure, this is a rich zinfandel, something off the beaten track and same thing in a fancy french restaurant or special occasion. instead of a red burgundy, go for an argentinian malbec from argentina, delicious, full-bodied, great wine. >> finish up. >> a little bit esoteric, off the entry level, in our business, the restaurant business, we have to educate,

sharing their thoughts in the "new york times" blog "the choice." >> hey, everybody. i'm will walker. i'm kind to talk over and explain a little bit about myself. i'm primarily interested in the humanities and not so much science or math. extracurricularly i'm actually the captain of the debate team this year. i'm one of the editors of this school's literary magazine. in terms of college that's going to translate into me wanting to find a place where these kinds of interests that i have are really going to be cultivated. >> hi. my name is bryan stromer. i grew up in new york city, so when i go to college, i'm really looking for a different environment. growing up with cerebral palsy, i've had to advocate for myself a lot and in the process i've also begun advocating for others. that's something that i really enjoy and i want to build upon during my college career.

>> hey, guys, i'm thanh-trinh, i want to help develop technology for the video industry or biomedical engineering. i think i'm a rather ordinary kid. oh, but i do have a lot of luck. this is my luck binder. i guess thanks to think could actually find out whether this huge college process takes luck, skill or some convoluted mixture of the two. >> jacques steinberg is the senior editor of "the choice" and author of "the gatekeepers, inside the college admissions process of a premiere college out in tenth anniversary edition. josh, welcome to you. >> thank you. >> the bloggers are incredible. lots of competition and the web applications have made it even more competitive, right? >> easier than ever to apply, electronically through the common application which makes it easier in some ways to push that button but also harder because more kids can push the button and apply to more

colleges. >> going more global, too, people all over the world. >> colleges are recruiting very heavily overseas, but it's important for kids to remember there's 2,000 four-year colleges in this country, and almost all of them accept the majority of kids who apply so the perception that it's competitive is that only a few dozen or so colleges, they are the ones that are often the best known. >> what do you remember in terms of the number of applications? how many schools should you apply to? >> guidance counselors say there's no reason to apply to more than ten colleges, some kids apply to 15 or 20. >> a lot of work. >> and if you have a balanced list no reason to apply to that many colleges. >> okay. also a lot of people looking for information or counseling online as well, and there's some places that actually do this for hire. is it good to go with something like that? >> i think you have to be very, very careful. >> right. >> you have to understand where are the qualifications of this person who is giving you advice, and the best thing is to really talk to students and parents who have come before you. who are the people that they have found helpful? >> one of the things that's changed certainly since you wrote "the guidelines" book ten

years ago is standardized scores, schools take the s.a.t.s or a.c.t. and some don't care and rely on the test scores. >> s.a.t. and a.c.t. very, very comparable in terms of what kids will accept. there's a website which lists several hundred schools that don't require either standardized tests, at least for some applicants. >> affordability playing a role now. are colleges being more or less generation? >> a combination. some schools have had to cut back on financial aid and are paying more attention to students' ability to pay and some of the elite schools are offering phenomenal packages where there are no loans for the most needy students, so you really have to be very discerning and aggressive as sort of a researcher. >> jacques steinberg, more on the website on the college applications process. thank you. earlier this week we asked you to make psy song's "gangnam style" rise to the top of itunes to make psy song's "gangnam style" [ male announcer ] itunes for the dreamers...
