and that's your latest weather. okay, on today food you want to hold onto summer and here's how you can do it. by canning. we'll start with something my wife in the south grew up with. chow-chow. it's like relish. you take great vegetables out there now. you combine them all up and here is the grid with the stuff you need. onion, cabbage, green onion, peppers, salt, mustard seeds and spices. two kinds of vinegar. any sugar you like. basically you dice everything up. >> great. >> green tomatoes. unripe tomatoes. you can use ripe ones but it's easier if you don't. chop everything up. first of all you will put tomatoes into the bowl. you put in everything you want. add salt. you add the salt and let it sit for 24 hours. the salt draws out the moisture. it makes it easier for the pickling juice to get in there.
9:35 am
then you rinse all of the vegetables off very, very thoroughly to get rid of the salt. also if you want to do pickles like bread & butter pickles, same deal. use cucumber, sliced onion. instead of two kinds of vinegar, you use one kind, clear like a regular vinegar so it's clear. you boil the cucumbers and put on ice to keep them -- >> blanch them then? >> that will help. put all the vegetables into the pot. take the brianing solution. four cups of vinegar, two cups of sugar. if you are doing pickles. 2-2. it's the same ratio. you boil it, add mustard seed, celery seed and turmeric for color. you take this and carefully put it in a very clean -- you have to sterilize canning jars.
9:36 am
they are inexpensive. put them in boiling water. what you will do is make sure they're clean. you have to get a new lid. these are mason jars, ball jars, whatever. fill it up and screw it on loosely. then come back here. we've got now in here basically a bath going. it's boiling water generally. wait until this continues to boil and carefully take it out with tongs. what happens is you can't see it here but there is an indentation. that means it is now vacuum sealed. >> okay. that's why you kept it loose? >> exactly. it will expand to create a seal. >> how long was it in there? >> basically about 15 minutes. 10 to 15 depending on the vegetable. you can do it with other vegetables, too. same deal. this time you basically just boil vegetables. like carrots or celery.
9:37 am
zucchini. green peppers. whatever you want to do. some of them you don't have to boil like green pepper, i like raw. you boil your briane. then add this, boiling brine to the liquid -- to the top. then seal it. thisle seals automatically on its own. you don't have to put it in the bath. if you like you can put it in the bath to be safe. >> very tasty. >> this is a condiment. the pickles are perfect. >> i love that. >> you can do anything. cauliflower, okra, beets. it's a great way to make a little summer last. >> you never cease to amaze me. of all the things you do, you have no time in the day. you're still home pickling vegetables. al roker. >> call me the pickler. i'll be in the new bat it man m.
