>> but you have a secret ingredient. sweet potatoes. >> that's right. and these are vegan. we aren't going to use real eggs. we're going to use a flax egg. we've got vegan butter we're using. >> that's actually really good for you. >> very good for you. high in omega-3s and everything. it also helps to hold these together. the first thing i like to do is start with ground flax seeds here. just add some water to this for a couple minutes will thicken up and will become an egg consistency. just like that. then over here we've got some earth balance which is vegan butter. doesn't really matter what brand. vegan butter around some soy milk. we just want to melt that together. that is going to go into our flour mixture. yes. and in addition to that, we're going to also add some water, of course it is very important to add your yeast because the yeast

be chewy and be the right delicious flavor and texture. just throw that in there. exactly. and a little bit of sea salt. exactly. a little bit of sugar. and of course, you can't forget your vegan aid. flaxseed. >> what's the secret to making sure your dough rises? >> well, definitely you need to make sure that your liquid that goes is in warm yeast because it needs to be able to activate it. the sugar also has to be in there because that sugar is what feeds the yeast. then you've got to knead your dough. kneading the dough is what's going to help the gluten develop and it is going to be nice and chewy and the right texture. >> can you overknead? >> you can overknead. you don't want to go for too long. i do mine for about three to five minutes. >> remember, tamron, you can't be too kneady. >> can't be too kneady! >> you can need a lot of dough

here and let it sit for about one hour. we're going to give it time to rise. it is going to double in size. that is what this is. it is doubled in size. now, while you are waiting for that to double, you can make the filling. for the filling we're going to use some brown sugar and some cinnamon. al, if you want, you can stir that up. another alternative to the brown sugar is you could use coconut sugar or you could mix them. coconut sugar is lowern glycemic. it's very tasty. >> does it taste like sugar, al? or like coconut sugar? >> it is a little different, right? >> yeah. >> mm, yeah. that's fantastic. >> keeping it real! he's honest. >> he's being honest. we're going to stick with the brown sugar. >> today is brown sugar today.

after that dough is risen, you are going to lay it out on a nice flat surface. roll it flat just like your daddy did. all right? and of course, you probably did this also with your father. you got to paint that vegan butter on. >> what's in vegan butter? >> blend of oils. >> vegans. they make it out of vegans. >> no. >> oil, is it different like vegetable oil? >> it is nonhydrogenated. so it is different from margarine. supposed to be a little healthier. sprinkl of course we have pecans. i think it is really important to have the pecans in there for nice texture. also flavor. >> i'm going to roll that up, cut it up. >> yes. roll it very tightly. >> where does the sweet potato come in? >> we are going to make that for icing. add your powder sugar. gets a little messy. >> it will end up looking like this. then the glaze. >> how about you pour that on there. >> okay.
