>> it's nothing inappropriately short. yesterday hoda and i went straight from the show to something we've been doing for years and years and years, the new york rescue mission. they provide meals, shelter and services to the homeless people of new york city. and i've been do being this since i was working with regis, and what i said to you yesterday is when i first started doing this, the homeless were basically men in new york city. it was very rare you saw a woman and hardly ever do i remember seeing a child. i would say 9 a5% of the people we served yesterday were women and children. >> it was grateful, really, sweet, sweet people. >> if you want to figure out where to do some good this season, one of the best places is the new york mission. >> e has their entertain thor of the year. j law made it. she is their biggest start of

so every house and every restaurant has gumbo boiling every single day on the table. so -- >> what do we need for that? >> we're using leftover turcokeyturkey. and the holy trinity. and a few dried spices and sausage and use whatever you want. >> all on our website. >> did we throw away the sausage? >> how convenient, there's two of them. >> what should we do? >> zirsfirst we have to make the rooux. you can use fat from the sausage. >> not olive oil. it gets a bit too bitter. we whisk the flowernow flour and oil until it gets thick. and a lot of people get freaked

out about the roux. you want to whip it until a nice chocolate color. it gives the gumbo the color. you can't microwave an roux. this has been going for a while. you can take it a little darker if you'd like, but it's not necessary. everybody does a different kind of gumbo. whatever you feel. >> what are you adding in there? >> the holy trinity, the bell peppers, celery, onions, and i love to add a little bit of garlic. and every layer has to be seasoned. so we're going to season it with a little bit of salt and cayenne pepper. there's a big mls conception about our food and everyone says it's cajun, it's new orleans, it's spicy. it's heavily spice the and heavily heavily salted but not that spicy.

then we have dried herbs, oregano and thyme. we are using a kielbasa sausage and a smoked sausage. can you use whatever you want, italian sausage, chory sew, whatever you have around the house. it depends on if you like it spicy. so this cooks. we let that cook a little bit. then add our turkey broth. at the restaurant we make our own turcokey broth from the carcasses. if you are doing seafood gumbo, you can do seafood broth. >> that's a lot of chopping, but -- >> this is what you have. again, you can take it a little darker. it's a nice, thickened stew, and it's thickened by that nice and muddy roux. >> he's still talking. >> i'm hungry. >> me too. so we're going to add our turkey meat, parsley and green onions
