but she's hardly alone. why the so-called best actress curse is a "signf the times." >> announcer: from the global resources of abc news, with terry moran, martin bashir and cynthia mcfadden in new york city, this is "nightline," march 19th, 2010. >> good evening. it's the end of another week, and like millions of americans, you've probably started to relax with some highly processed fast convenience food. many take the junk food option because they say it's cheap and easier to prepare. but according to some experts, that approach has led to an obesity and public health crisis. so, is it possible to change our fast food habits? well, one celebrity chef is on a crew said to do just that. and he's decided to start in the unhealthiest place in the country. as vicki mabrey now reports. >> i want to get everything in the middle now.

here's your braeakfasts. there's the bloody corn dogs. >> wow. >> reporter: this is what stacy edwards, 35-year-old mother of four, fields her family every week. >> you tell me how you feel looking at this. >> yeah, it's gross. >> reporter: not that she's ever looked at it this way before. not until british chef and activist jamie oliver came to huntington and made her face up to what they're eating. >> i need you to know that this is going to kill your childrens early. off their life.bout 10, 13 years >> i w just like everybody else. it is too expensive to eat healthy. that's one of the things you hear. with four kids, i nd of felt like you had to have the easy food around. kids are overweight, i'm overweight, husband is overweight. >> reporter: in fact, her son is over 300 pounds. how old is he? >> 12. >> reporter: 12? >> yes. so, i mean, we needed it and i'm doing it for him.

everybody says do it for yourself and i am, but i want it for him more. >> reporter: stacy's story can be found anywhere in america. but this isn't just anywhere. this is huntington, west virginia, which holds the dubious distinction of america's unhealthiest city. that's why jamie oliver came to town. but you've become kind of a food crusader. >> i'm like a professional [ bleep ] stirrer, you know? and i know that's a naughty word to use but that is kind of true. any salad in the house? >> no. >> it's all the same colors. golden brown. >> the story of huntingdon is wanting to clean up the food. and that's schools and supermarkets and the restaurants and the fast food industries. i spent 18 months traveling around america and this town looks and feels like -- that's the ironic thing. yes, this area has, you know, some of the tip of the iceberg of problems but it's only 2%, 3% away from the national average.

so, the reason i'm passionate to do this program is because -- this isn't just about this city, it's about the whole of america. who knows what this is? >> potatoes. >> so you think these are poe day taupes? not potatoes, though. >> i don't know. >> do you know what this is? no. who knows what tomato ketchup is? yeah, that's what it's made out of. >> i know that one. >> thickens quick. >> so, jamie is stirring the pot here, hoping to create a chain reaction across the country. >> it tastes like starchy fluff. that's really disgusting. >> reporter: by helping folks like stacy and her family. bluntly tell america what we're doing wrong. portions are too big? aren't they? >> i want americans to enjoy food. i want them to celebrate food. i want them to have wonderful thin and big cak and i want

them to indulge. it's not the extremes and the treats that are the problem. it's the every day. >> reporr: back in england, oliver became famous as the naked chef. not because he was, but because he wants our food to be, free of additives, fake flavors, processed food product. he wants us to eat food that's fresh, pure, unadorned. >> the world through my eyes, right, is a lot of public, a lot of people in the public getting mugged. you know, they go to buy something which they think it is but if you look on the label, all the chemicals and numbers and if you put the camera over there and look at all of that stuff there, i mean, that's our next scene in the show today. >> reporter: that's what's in our food. >> it's not food. and over the last 50 years, so many of these additives have been banned because they hurt us. duh. >> reporter: that led to a successful campaign to change what british school children eat. his crusade for better lunches

bore fruit, literally, with more fruits and vegetables on school lunches. in huntingdon, he opened a kitchen right on the main drag to teach cooking classes. >> this is work. >> reporter: and break the hold on fast food. >> there you go. >> maybe opening up this kitchen is going to be, you know, it's a great thing, because people come here for free and they can learn, you know, how to cook proper. >> reporter:eople are now into it and they are kind of pushing each other? >> yeah, we're all kind of in it together. some what they have in here -- >> breakfast pizza, and fruit and cereal out there. >> right to have a chat for five minutes? >> sure. >> i didn't like what the kids ate today when i saw breakfast. i had never seen pizza for breakfast before. it's that kind of food that's killing america. >> you don't have processed food in england? >> god, yes. and it's killing engla, too. this freezer is full of stuff here -- i have a problem with

it. i don't get the impression that's mutual. >> you're right. >> the issue is not about food, it's about education. if you feel confident to sit there and put a pan on and cut up fresh chicken and a few bits and pieces and know what spices, oils, to make it taste heavenly, you can save money often, and really it's the transition of highly processed food to real food. do you really recognize any of those? >> ground beef. first ingredient. >> i think you are taking this up with us and you should be taking it up with those over us. >> i'm not having a goo at you. >> chicken breast is the first ingredient here. >> do you not question any of that stuff? >> what's wrong with that? >> what's right with that? would you eat that? >> yeah, it's good. >> you pick a label up and look at it for three seconds. if you don't understand anything on the back of that pack, don't buy it. >> reporter: he's hopeful, but also realistic. >> i don't want the fast food chains to go bankrupt.

one, it ain't going to happen, but i want the public, in some way, shape or form, e-mail, phone up a chief exec or a local area manager, just a few trickling saying to fast food people, we don't want that. we don't want all these additives. you know, give us a freak patty. not all the preservatives in it. we want more fresh, you know, salads and stuff like that. not as an extra, but incorporate it. be clever with it. i'm not anti-fast food, i just want the people cooking it not to mug the public. >> reporter: and the edwards family? well, at the time of our visit, stacy had lost 40 pounds. the rest of the family is down, as well. >> jamie is not the savior for huntingdon, but he's going to give us the tools that we need. >> reporter: so what have you changed? >> we have totally revamped the whole system of eating. i mean, the kids don't have their snacks anymore. they're not eating chips, they're not drinking the pop. >> reporter: and what's happening? >> they're losing weight.
