♪ well, it's almost time. we're talking about turkey time of course. and whether it's your full time with fowl or you're a poultry pro, everybody needs some help cooking the big bird on the big day, and here are some tips for the thanksgiving tips. sue smith from the butterball turkey talk line. hi, sue, welcome. >> thank you so much. >> what is the first thing we need to know? >> first thing is tomorrow is thanksgiving. make sure the turkey is thawing or get it thawing now. if it's still frozen go ahead and put it in cold water. if you keep it in the original wrapper put it breast side down in the kitchen sink. it takes about 30 minutes a

pound. it's going to be the quickest if it is rock solid right now. change that water pretty frequently and that will be the quickest way. >> so it makes a difference when you change the water. >> it does because initially this is so cold. when you put that water in it's going to really make that water cold. so if you change the water periodically it will make it go quicker. >> that's a good tip. >> once it's defrosted we recommend just in a 325 degree oven. place it in a shallow pan, you can see two or three inches deep. there's a flat rack. brush it with some vegetable oil. and that gives it that nice golden color. >> not butter, vegetable oil. >> exactly. and then your best friend on thanksgiving day is your meat thermometer. you have one, go ahead and put it right in the thigh. it needs to get 180. the breast should reach 170. >> okay. >> and then if you stuff the turkey the center of the stuffing should reach 165. >> okay. >> and a last tip, too. about 2/3 of the way through you're going to grab some reynolds foil. you're just going to shield the top of the breast. >> what does that do?
