it's about an hour for pound. a 5 pound brisket and probably take 5 to 6 hours low and slow but the patience pays off in the end. once it gets to a temperature needed, you will cool it off during the night and then you have this big chunk of brisket meat and slice it up. >> this is the good stuff. i hope they're hungry. >> looks so good. >> i love it! >> we move ourselves down to the next segment of this. >> what's next? >> this is where the magic starts to happen making all the chili. the good thing we're starting with an incredible cut of meat and chili brings it together. in the pan we start with bcon because bacon makes everything

and crispy and add in chopped garlic and cook it until it's nice and aeromatic and we add in the onions and cook it until it's nice and soft and tender. >> you have my favorite ingredients. >> this is nice to wake up to in the morning, this smell, football, forget about it. wait until it's cooked down and nice and then we have nice tomatoes we will pour right in. this is the part my italian roots making basically a really great tomato sauce our brisket goes into. add a couple tablespoons of worries ster sauce. and and spices that make chili chili and we have more onion powder, garlic powder, black pepper, salt, oregano and ground cumin and dump them all in. at this point, we let this

together. >> is there a kick to it? >> i generally leave my chilies on a milder side for mass appeal so everybody can eat it and enjoy it. if you want to make it more spicy, add in stuff and jalapenos and chili hot sauce. >> lester is really spicy. >> our chili is nice and come together. smell that. and cook this abut to allow the flavors and spices to come out. we add in our brisket meat. >> come to papa. >> black beans and coffee brisket chili. this will simmer another 15 to 20 minutes to let the flavors marry together and come together. then, you're left with a delicious play on a brisket coffee chili. >> how do you serve it? >> i like to garnish it with a
