early vote in the places that have it as well as in person, absentee. that's a great signifier that latinos and others in the community are paying attention and are prime to go out and vote on tuesday. so this community is now starting to participate at the numbers that really demonstrate its force. >> so what do you think is the problem with getting the vote out in the latino community? why aren't they going to the polls? >> this misconception is that latinos don't turn out. when in fact they do turn they're registered. in 2012, 80% of latinos who were registered. so the key is to register latinos to vote. because once registered, they'll turn out. >> tell me about my ride. what are you going to did? >> it's a program that offers you a free lift or uber ride to new youers. and can you text 73179 -- you've got it in your head.

and so i lived with folks there. and i lived in this tiny town of 500 people and learned how to cook with some folks there. yeah. >> and apparently you used some unique flavor. biscuits, lemon grass, not typical for dessert. >> sometimes i like to see what's available seasonably. so we have like one of them is we have a small version and a larger version of a goatcheese and a red wine fruit come i think that's sort of a nice seasonal flavor for the fall. lots of winter spices. reminds me of mulled wine. we take seasonally. we have some thanksgiving tarts that are cranberry, orange and a cheesecake. and a lot of travels, we travel a lot. so i always pick up flavors and flavor ideas on the way. >> i like this one over here on the left. i thought maybe it was a fruit. but that's smoked salmon.

tart. this is almost like bagels and lox, but less carbs, it's got cream cheese with a bunch of fresh veggies, carrots, scallions, fennels and radishes. and smoked salmon and radishes on top. >> show us what you're bringing to the emporium. >> one thing that we're selling that people can take with them is a tart kit and so you get four already done tart right here. >> you get a jar of tart fillings this one is like a pear vanilla jam. and we have crumbles with little garnishes. >> so you can do this at home on your own. >> if you don't have time to eat it now, you can take it home and make it later. >> you mentioned you were inspired by these creations. what did you want to do after that?

and i've just liked the idea of tarts there similar to pie except instead of being served in a pie plate they're kind of freestanding, because instead of a flaky crust, they're like a crisp, shortbread crust so that's what the difference is. >> and what about the secret to making it at home? any quick tips? it seems so intimidating to get the proportions correct. >> they are a little intimidating. part of it is just having the right material. a lot of people use the fluted ones which are hard to get more accurate. you can see them at stores. you set it on top of a sheet pan and then you put the dough inside of it, you have to make sure it's really cold before you throw it in the oven. >> this goat cheese one is intriguing. >> delicious.
