garlic all day long. >> yes. >> and the salt crust, and this is going to look like a lot of salt, but this meat needs it. so salt and pepper, and mix it altogether, and put it all over the prime rib and you want to make crust around it. this is going to the sit for about 30 minutes. >> it is important, sint? you need to rest in this position. >> and for a couple of hours if you'd like, but take it out of the refrigerator for 30 minutes and let it come to room temperature before it comes in the oven. >> and you put it in the nice big roasting pan and you have room around it? >> that way, you will have even cookg. so t ithovch is at 450 degrees, and that is going to give it a nice sear on the outside, but as soon as it goes in, you want to turn it down to 350 so that it will cook lower and slower and you will get the nice even cook iing. >> and up front, professional tasters. >> and oh, my gosh. >> and this is terrific. >> and i mean, all it

the salt and pepper, and man, this is crazy. >> and carson and al have died and bone to heavgone to heaven >> you take it out, and 120 degrees and then let it rest. so while it rests, let's make the gravy. the brown bits here and quarter of a cup of the fat left in the pan. add to it, flour, and cook the flour for a minute until the flour flavor cooks out. and matt, pour in the beef stock. so you pour in the beef stock and you can't ever have too much gravy, because everybody loves, that and you want to whisk this and get all of the flour mixed in and stir in the dijon mustard and you put in thyme
