it's about what can we do? >> give me a second on the dry-aged part? do you have to use something that's been sitting back there for a while? >> you can use it. it means some of the moisture has evaporated, the protein gets concerns and meat becomes more tenderful and flavorful. >> i leave it uncovered in the fridge and let it dry out more. >> exactly. i let it dry to have a better sear on it. >> plenty of salt, especially black pepper. i will put it right on this fat side in the pepper. >> talking about this pan-frying searing versus grilling? >> i like to get the crust on my systematic more than drilling where the fat drips through. the fat is flavor.
