purposeful. life aroundd him was hectic, busy, aexhausting, but awful lot of fun, and awfully satisfying. went back and read last night his first account in the '70s when he just was released, a prisoner of war having served five and a half years in vietnam as a pri of war. and i was struck by how here mbered everything, described everything, but it was also so matter of fact. even then, he didn't betray his emotions. was he always like that? you wrote abo book aut this experience with him. >> yeah,un it'sny because i would ask about the bad things, obviously, the stories people know, the torture, and he wou be very matter of fact about that stuff. you know, this is what happened. this is whathey gave me to eat. this is what they did to me when i refused to do is. th is how long this particular experience of torture lasted, but there wasn't any bitterness

or fury behind it. what he wanted to talk about was the fun he had in prison. when you're in solitary confinement for 2 of the 5 1/2 years, it's hard to have fun, but he had a guy in the sell next door t him and they would tell each other jokes with tap codesnd he would talk about all that stuff, in great detail. but the bad stuff, he gave me theoutlines of it, but skipped along it pretty quickly. >> there are a lot of remembrances planned for this week. i have to ask y about president trump, whoho senator mccain, as i understand it, did not want to be attending any of these services. there's report in "the washington post" that the white house had prepared a statement praising senator mccain for the president to issue, but he chose not to a insteaust issued a tweet to the family. how does that sit with you? what do you think senator mccain would be smoing this ing? >> i think he would brush it off. you know, i'm going to try very hard not to think or talk abou donald trump for thiswe .

we're back. 8:48. forks are already clinking ound. we have an end of summer salmon dish from one of our favorite chefs. ed brown is an innovator for restaurants associates. his restaurant as is currently serving up great dishes outs at the u.s. open which starts today. so excite said. good morning. one of my and tennis.ngs, food are you ready, what did you tell me, the 25th ye >> the 25 year i'm out here. this is the 20th year of ace's restaurant, open for 14 days of the year, but a very special restaurant. >> this is a beautif light dish. not carbo loading like the athletes might do. these are the ingrients. >> super simple dish.

a salmon dish with chickpeas. 're using chickpeas in two ways, dries and smashed as well the unique thing is we're cooking it in olive oil. at a super low we have a little sashay with some spices and aromatics that gets tied u and we're going to drop it in the oil. once it's in the oil, i have salmon out at temperature. >> did you elus what was in there? >> we have thyme, lemon zest, bay leaves, and coriander and garlic. >> that seems fancy. you put a nice generous salt on there. >> nice generous seasoning. that has been flavoring the oil and we're at low temperature. we're not fryingtit, j transferring the heat and flavor of good olive oil and the ingredients flavoring the oil. >> a very interesting .ambien i have never seen anything like this. >> the protein is not u soaki the oil. the unique thing is the flavor nd texture which is different than any other way.

>> the sashay, you get all of the aromatic flavors. >> let's sashay over here. i had to do it. >> so it only takes about 15 to 20 minutes to cook. and it becomes tender that basically it can open up like that. >> because you're not going it tell by lking so set t timer? >> exactly. >> all right. how does it taste? >> bazing. >> not super oily? >> not even a little bit. >> that's like a b oket oil. >> but all of the oil stays behind. none of it is in the fish. >> okay. >> so we'll be using fresh chickpeas or in this case, swapping out for regular peas which you can use as well. boiling salted water. those are going to get a blanch. blancheans they get cooked a little bit to set the color and get them from being raw. >> quickie. >> right into ice water. then going to move down here. chickpeas using the like a vehicle for other flavors. >> the chickpeas in this case are going to be carrying the flavors of the shallots, garlic,

got a little red chili flake and .cumin. >> ni >> so this just comes together a little bit. >> what are the peas doing over here? >> peas are going to come down later. >> okay. just want to know where the peas were gettingin. >> they're going to walk themselves in. >> they're going to sashay over >> i have the chickpeas, put moisture, water. you could use wine, you could use stock. this starts to simmer and come together. u take a fork and start to smash them. >> that's fun. >> you smash about half of them so you end with this consistency where it comes together, but you can still see some whole chickpeas. >> it's kind of hardy like a potato but probably healthier. how does it taste? >> let's talk about the salad. first, we have to finish this. >> finish it off with parsley, lemon. really simple. >> delicious, a you serve it under the salmon. >> like a bed for the salmon. >> i like that.
