my green egg or smoke it. >> green eggs are great for brisket. find a qualitybrisket. ask for what's called the whole packer brisket. that meansou have two parts of a brisket. the flat which is this part here on then then point which is also called the fattier or the moist brisket. >> did you do anhing to this? we trimmed off a little bit of the fat on top. then this other side here, there's a wedge cut of fat in that pocket. you want to cut that out. once you have the brisket lean , clea what you're going to doak is t plain yellow mustard and smear it or the top. can be any kind of yellow mustard out there. coat t entirety of the brisket. this will help all the seasoning which is just salt and pepper. >> all sides of it? >> could you use adijon? >> you could. it will give an intenser flavor. the main purpose of it is to

help thi rub stick to it. you're going to aggressively season this with theustard all over top of it. that's going to go in your smoker. set your smoker a about 250 degrees. briskets take a long time. if you're doing the brisket, yak want to sure you have time set. it's going to take 12 to 14 hours at around 250 degrees. we like cooki our briskets with cherry wood and oak. >> how do you keep your fuel going f 12 urs? >> well, it's a great question. you got to stay on it. >> the wood's gotngo keep g on in. >> wood, charcoal, got to keep feeding it. c>> itomes out 12 hours and it's there. one o the components to the sandwich is the quick cured pickles. super simple to make. cucumbers. gets sugar. salt. some smash garlic cloves. >> interesting. nyy the sugar? >> becauseing that's pickled always has a little bit of in it to help wehe preservation and flavor. rice wine vinegar and white

vinegar. you can do this in a couple of hours or let it sit overnight. you have plenty of time to make these pickle you're going to let them sit in this solution. the cucumbers will leechut additional moisture and juices. it will create light pickled flavor. so this goes in. it's going to be cooking slow and slo 250 grees. about 12 hours later, comes out of the smoker. we like to wrap itn butcher paper to hold off all the moisture. >> what is that? >> it's a- a whi color, peach color, get it at the lstcher shop. you could use parchment paper. if you ask the butcher, they'll give it tu. just don't use xed. >> all right. we got about 30 seconds. slice that . >> craig's going in for >> oh, my god. look at that. >> that is beautiful. >> wow. > burnt ends? ever hear of urthat?
