>> good to know. >> that's double back. the kind of beer we use to marinade the steak. it's a little chewy got a little tooth to it, but it's a good hearty beer. >> hearty beer with teeth. >> what we have going on here is a sirloin steak. we have marinading in some of that >> do you have to cut anything in the steak for it to marinade well? >> no you really don't. as long as you get it into the marinade as soon enough. that marinade gets in there nicely you can tell it's in there really good. >> is there a rule of thumb how long you marinade it? >> if it is steak you marinade longer than fish. fish is so open that it will soak up a marinade usually only

steak over night 24 hours. too much longer it starts to get into the inside of the steak to the point where it colors a little more. we pulled this guy out of the marinade and then we're going to go ahead and season them up with some cracked black pepper, gagarlic, onion. just your traditional montreal steak seasoning. from there we'll move it over to the pan. i'm going to go ahead and give this guy a flip here. that's our 9-ounce steak. menu in a slightly smaller steak, 6-ounce version. going to get smoky in here. to add to that we have pan roasted potatoes. these are red potatoes and yukon gold we have going on in the pan. into that we'll add onions and peppers give that a little color and extra flavor. >> is that sweeter smell the potatoes or the steak? >> it's a little bit of the steak it has the honey on there. you get that carmellization that

>> it smells awesome. >> we're also going to add a little fresh rosemary into the potatoes here. this is rosemary we keep on the sprig until time to go on the pan and then you pull it down it all comes right off like that. >> you put it in that big you are not chopping it up? >> it's more for air mattic you are just going for the smell. people aren't going to probably eat it because it has a texture similar to pine needles you know. you just want to have it in the pan to start essential oils in the herbs that will help to season the potatoes then it will be good to go. >> is beer sort of like citrus like lemon or lime where there is something about the liquid that breaks down meat or tenderizes it? >> it doesn't really break it down so much. that's sort of the reason you want to add something that has a bit of acidity to the beer when you marinade it. we're going to keep this going.

what we're going to put on the bottom of the plate is more beer, this is the sauce we're going to put on here. this is a reduction basically. this is the beer reduced down with a beef stock. we're going to provide a base on the plate for that. kind of spread that around and make a nice little pool for the steak to jump into there. we've got our sauce on the bottom, we've get our potatoes going here and we're going to take our steak probably a nice medium rare. >> you try to do that little circle thing at home it doesn't look like that at home. >> the important thing you got to keep mind your sauce isn't too runny. if you have a runny sauce it's going to spread all over the place. >> it's just a matter of cooking it long enough. >> look how fancy that looks. >> it spreads, but doesn't get too watery. >> this is a mushroom melody here. roasted together in the oven and

>> those are with olive oil. we use a roasted garlic olive oil. to that we're going to put our roasted potatoes on the plate. you're going to have the finished product of the steak. drunken steak. >> our producer just gave us a time cue and goes we're all drooling in here. >> dig in. >> i will give you a bite first tiff. >> how long do you keep the patio open do you keep it open still? >> we don't have a set cutoff date. it's all as warm as it is right now if this keeps up we'll keep it open october, november. we will be having packer games on out there in the big screens we have out. so we all know packer season starts this weekend. we're going to have the games on outside on the patio as well as inside around the bar. so don't let the fact that there is a packer game on keep you away from the restaurant. you can come out have a drunken steak and you know get drunk and watch the game have a good time you know. watch the packers root them onto

[ music ] ? ? a lot of people know those songs, but not everyone remembers the story line. >> the story so the play which is a little bit different than the novel, our play is a story within a story. so, miguel who wrote don quixote, he gets arrested and he is brought before the inquisition. while self-in jail he has to -- while he is in jail he has to entertain the other so they don't beat him or kill him while he is in prison. so he tells the story of don quixote. in this story you hear about tilting windmills and fighting ogres and giants. don quixote has a way of seeing things a way most people don't normally see. he is an optimist. >> the artistic director mark clemens is directing this he has

girls and the color purple. good to be working with him again? >> yes he is a wonderful director. it's a big collaboration with artists. >> what do you think people can take away interest this show? >> i think one of the big things in the show is hope. and you know despite what we see you know things can always be better and so, it's easy to label people certain things, but, you know sometimes the essence of a character is more we're more than what we do or own our occupation. don quixote has that ultimate vision of other people. >> i'm going to let you set up really quick you went to whitefish bay high school a shoutout to all of people you went to in high school. what musicals did you do in high school? >> my first musical was oklahoma and the second one was fiddler on the roof. >> that is awesome. >> yeah. and have fun. >> so it is actually easier than you thought it would be? >> most definitely yeah. and jen is such a wonderful person. she's been guiding us through this all the way. -- you really feel like you have a health coach? >> definitely. she calls me at my house and stuff like that. >> the primary reason people come in are i want to look better, i want to feel better and i want better health. and it is almos three things are on the chart. so to be able to give them the tools is great. i know what it is like. i lived through it i was struggling with my weight. i understand how it can cause you to feel depressed. you get into this vicious cycle of eating food and you just keep getting medicines added and you think what are you going to do? and people go to drastic measures. as far as surgeries and things like that.

and years, maybe decades. and you know, they are used to their employer saying, well here's two options pick one. here's two options pick one. year after year after year. now we're your human resources department. now we're going to educate you and we're going to figure out what your needs are and show you options that might work for you. eventually we would get to the point where we say here's a couple options pick one. the first and foremost thing when you are turning 65 one three months ahead. gives you plenty of time to get ready and get educated. second thing is attend one of our educational sessions that happen every single friday. and learn all about the different parts of medicare and the different type of plans available. >> that's one of those things do you free of charge. you do no cost consultations in general, but these educational meetings, every friday, going on people should let you know that they want to come they are at 10:00 a.m. >> they can just show you too.

nonprofit organization to provide a high quality of living. joining us now is dr. shandowlyon hendricks-williams to talk about project hope. great to meet you. >> nice to meet you. >> you have two chi children you have a son who is 27 who has a disability and a daughter who is 29 right? >> yes. >> she's a college graduate and out doing her own thing. >> that's correct. actually she operates the group homes for me at this point. >> wonderful that she is part of and, you started thinking about your son and long-term like many parents do and what is going to happen to him when you are not able to care for him physically not able or after your death. >> correct. correct. so most parents experience empty nest that you said and i began to think about what was going to happen to brandon and his sister is very much capable of caring for him, but that's a big burden. particularly if she gets married and has children.

group homes in the city of milwaukee and wasn't safed with what i saw. either there were too many clients or it just wasn't like a home. so i did a little bit of investigation after some encouragement from some friends and people who actually work in the health field and opened up a two bed adult family group home. what we do is try to offer an alternative to nursing homes for young adult who is have disabilities so they are able to live in a home like environment, and also be involved with the day program or shelter workshop. >> i think especially at your son's age being 27, a nursing home i think a lot of people can understand why that wouldn't be an alternative that you are particularly fond of. you want him to be in community as you said with people of his own age and maybe learn whatever independence skills he and others are able to do depending on their level of disability. so, obviously there is a need for group homes for young

october. it is now open. so how many residents are able to live there right now? >> well in my home i only have two residents because i focus on young adults with severe multiple disabilities. everything has to be done for them. they have to be bathed, they have to be fed, their laundry has to be done. we want them to have that individualized attention. which is something that you can't get if there is residents of four or more in my opinion that is. in each home we're certified for two adults and that's the maximum we take in each house. >> what about the cost of it. is there a way that families are able to afford to have this high level of care? >> certainly. so there are medicaid waivers programs such as iris, community care, family care and i care to pay the cost for the support of home care services and then the family is just responsible for room and board. there are other financial options so it's not coming out

option for it to be affordable. you have a fundraiser coming up i'm sure the needs are great when someone requires the amount of attention you're talking about. it's your first ever cars, bikes and cigars show scheduled for this sunday right? >> yeah and we are so excited. it's an opportunity for the community to come together, the residents will be there. we're having it at garfield 502. there are five categories there is old school, new school, sports car, vintage motorcycle category which will be given away a trophy. we'll have raffles and raffle prizes and we're taking donations there. >> that is wonderful. there are trophies in those different categories of cars or motorcycles. >> correct. >> that is super fun. i think a lot of car enthusiasts would be excited to participate in that. what if people aren't able to attend, but would like to donate and help your cause.
