look at that. everywhere you turn you're probably going to see this. squash, squash, squash everywhere. it's in season now. it's peek harvest october through december. all varieties too. butter nut, acorn, spaghetti squash. so what do you do with all of that squash? today we've got a recipe for you that combines savory sausage with roasted apples and acorn squash. >> that's right i'm going to admit i had squash for the first time just two weeks ago. >> what? >> i love it. kate lulloff is with jones dairy rm to use some of the season's favorite produce. >> how old are you like 45 and you never have had squash before? >> no my mom didn't make squash. >> and you never it had in a restaurant? >> no. never had squash before until two weeks ago and i love it. >> how did you have it? >> with brown sugar and butter it was fantastic. yum. >> here's the thing i think a lot of people find most

you just have to have a really sharp knife right? >> a really sharp knife. the first batch i had this season i had a hard time with a regular knife. if you pop them in the micrmy microwavefor two or thre. >> are these the kinds you used today? >> they are all awe corn. -- acorn. i used the green and the w >> it these taste different? >> very similar flavor. >> they come out look something cute and so delicious. what is this a sprig of sage? >> yes because we have ground sage in the recipe. always make a garnish with something you used in it. >> that sounds so fancy the way you said it a sprig of sage? >> i was trying to be fancy. >> what do we do? >> i have the filling started because it takes a little on the stove. we started that forsake of time. >> what is in there?

bit. you use the flavor from the sausage to flavor the rest of your ingredients. after the sausage cooks down a little bit and have you a little bit of that in the bottom of the pan you add in your onions and celery. saute for a few minutes then add in our apples. those are in already. those are the four ingredients i have in here. once those are sauteed and the apples will start to soften a little bit we're going to add in a little brown while i'm doing this if you want to brush a little squash with olive oil we're going to sprinkle it with salt and pepper. we're going to do brown sugar and a little butter to help that brown sugar caramelize a little bit. >> this is the second time she's going to have squash. >> in my life. >> i ate the left overs so. >> third time. >> it's so simple. all you have to do is brush it. a little brown sugar a little butter throw it in the oven it's so good. >> it was delicious.

okay. >> once we mix this in we have the butter and brown sugar in there. usually for anything stuffed you will use like a bread crumb, or cubed bread. we're actually using panco. a little bit crispier. >> like a japanese style bread crumb. >> exactly. a little panco and a little bit of parmesan cheese. >> while she was cooking this i said i'm like my mom must have cooked a lot with celery and ownons that smell reminde m it reminded me of the smell from my mom's kitchen. >> that's such a good base for anything you are cooking celery and onions. it infuses a great flavor into just about anything you're making. >> it smells good. >> you can smell the sage. >> it's awesome. we're going to makes that up. that's going to be our -- >> what cheese did you add? >> parmesan. >> we have our squash here. these are not cooked. these are the ones as they are raw. we're going to flip the towel these have already been baked.

like after they come out of the oven? >> how long do they bake? >> 45 degrees for 25 minutes. pork them with a pork. they will be fork tender. when we fill them this is a neat little tool if you do a lot of baking. ice cream scoop or cookie scoop you can use this for scooping out the seeds and scooping the filling in. >> i'm going to let the scoop the filling. we're going to show the finished product. thatow get it out of the oven it looks like you top it with a little more cheese if you want to. >> only 15 more minutes in the oven after you fill it and sprinkle it with a little parmesan. >> you can use the maple pork sausage, but there are lots of other different flavors and varieties of the jones sausage too. there is just natural, they have chicken, >> turkey there is a chicken. there is a light link that takes out some of the fat and replaces it with rice if you are looking

great to see both of you. >> thanks for having us. >> this is so fun. a much anticipated issue. >> i think it's our most popular of the year. i think our cover this year is particularly energetic and just feels like the city and we show so many different things. i love it. >> uh-huh. >> what type of vests will we see this year? >> there is a lot of different categories. a new category, best splurge, we have best leisure, best arts. on. we have a hall of fame a lot of categories. >> that is so awesome. people love checking it out. it's kind of like you do the work for us tell us where to shop and where to eat and where to get food and drink. i love it. readers choice dining award you will have the winner there is this issue. >> yes that's a big story too. so that was a survey that we sent out to readers and we had it online and, the readers spoke and they have a lot of opinions

their suggestions are great. >> that's awesome. >> some for the readers choice, i don't want to tell all of the choices, but, the top five restaurants overall, three of them are bartaoetta restaurants. and we also have sanford the other categories are a lot of ethnic dining and best cheap eats, so there is just, i don't even know how many categories it's a really good article. >> was there anything that surprised you this year? >> i think that we were surprised that last year, some of the smaller restaurants won in the overall category. and so we were surprised that bartalotta swept the top three

best of. >> let's talk about the photo contest. >> my milwaukee summer contest winner is john. that was the one that i was announcing all summer long and we had a lot of entries and they were really great then we took our favorite ten, put them online, the readers voted and john emerged the winner. >> i did. >> tell us about your photo. >> the photo was of milwaukee's lake fronts the dennis sullivan ship, the vessel w where it stays. the sunset was behind milwaukee and you know just it's an image that shows milwaukee as home and you know, people know discovery world and having all of those elements in it was really interesting. >> that is really beautiful. >> isn't it gorgeous i love the way it looks like the light is emanating from the discovery world. >> right yup. >> it's really beautiful. >> what did you take that photo on? >> a digital camera.

[laughter] >> nope. nope. >> are you a photographer by trade is it more of a hobby for you? >> it is a hobby. i work for a nonprofit called america scores milwaukee. photography has been a hobby of mine. my father was a photographer and you know at my age when he was my age, and it's i throw a camera in my backpack, i bike around town and i find images that you know are interesting. find places that people see like discovery world. to wait for the ship to come in and the sun to set. so, you know, hanging out for an hour waiting for that boat to come back in, and then perfect timing with the sunset. so. >> that is awesome. >> john's prize was a lands end gift card and he has already started his shopping. >> i have got to look sharp. >> so you got that shirt at lands end with some of your freeze win -- prize winning mon.

a fun way to get readers. i love the way you get readers involved in voting for the contest in picking a top dining category. those ways are very interactive. >> it's really important to me as i haven't been at the magazine very long, but one of my missions there is to get more interaction between the editors and the readers and that type of input yeah. >> i remember when i first moved here that was one of my favorite things is kind of going through that and saying oh, i want to try this, i want to do this. lived here all your life or a short while seeing that list sometimes there is something you haven't tried and now you want to go check out or learn more about. >> right. right. you want to hear about some of the winners? >> yes. >> all right i will reveal a few. best tuesday night in town is at tonic in bayview. >> oh. >> pickers circle where musicians are just welcome to come and join in and it's a very relaxed atmosphere, but the music is wonderful. it's just really really fun.

one third of americans comparison shop for healthcare. but few people have a full understanding of basic insurance concepts such as deductibles, coinsurance and out of pocket pay. joining us now with money saving tips and advice to clear up any confusion, is rebecca madson. good morning to you. >> good morning thank you for having me. >> let's talk about open enrollment. loot of people wonder when does it start? >> open enrollment starts in the fall and, if you are an employer plan, the majority of employers have open enrollment in the fall. if you're a senior in a medicare plan, medicare starts october 15. and it is the time of year where people can really spend a little bit of time to pick their health benefits for the coming year. we know that one in four people believe it or not would rather do their taxes than go through

it is a little confusing they don't understand the term we're hoping to simplify that today. >> in terms of the employers what should they be thinking about or doing when it comes to offering health benefits to their employers employees rather. >> the employer in addition to looking at the cost and the carrier at the type of plan there are things they can overlook that are beneficial to them and their employees. addition to getting your glasses or fillings or teeth cleaned you can get a vision exam and detect diabetes, you can get just a routine dental exam and they can find issues with your overall health. we know oral health, and heart health are very closely linked. and so looking at programs like that, as well as wellness programs. happy employees and healthy employees go hand-in-hand. taking the time to actually say, hey is there a wellness option

employees, but also makes you have a more productive workforce and can lower your healthcare costs if you have healthier employees. >> how can people save money when 2 comes to choosing a health plan? >> there is a number of ways. make sure your provider is in the network. you knee doctors you go to for the -- you know what doctors you go to for the most part. two thirds of people don't know they are even doing that. look and make sure that your provider i network. the same with the medications you take. medications are the most used benefit. how do you spend the time to actually say, look what i'm taking, is it covered by my plan? you can also engage in wellness programs. and you don't have to be a healthy person to do it. that's a big misconception as well. if you get coaching, if you do fitness programs. if you go through consultations or counseling and advice from somebody like a registered nurse

disease you can earn money back. that's another great way you can save money. lastly, look and see if your employer offers an hsa. that's a health savings account. you put money in there pretax. the interest is without taxes and you can pay towards your expenses. no tax implications. so if you are in a 30% tax bracket it's like getting a 30% discount on covering medical costs.>> used to be check this box you're a smoker or a nontobacco user that was about it. there are so many new trends i feel like in healthcare. what trends are you seeing? >> well, every year open enrollment is new because there are so many changes to the plans and all of the terms we talked about like deductibles. wellness is really the space where we see a ton of growth. the importance in not only keeping costs low, but understanding before an event

health history, going through a biometric screen where you take basic information like weight and blood pressure and glucose levels. that helps employers and the insurance carrier help individuals because we understand their health status and can avoid an event happening by giving them proper diet, nutrition and getting them into the right programs ahead of time. this is really a big trend in the industry lately. >> great to talk to you this morning. where can people go for more information? >> there is they can go. we have one resource at uhc.com. called healthcare abc's. as it sounds it tries to take the information key terminology, how you can go through open enrollment and basic information and make it really simple so that it can help people have a greater understanding and really get to that percentage of the population not very familiar with their healthcare terminology and the open enrollment process. >> thank you so much for your time today.
