hospital food first of all, obviously there are options there, we are always trying to make things better. >> well, yes, and maryland hospitals for a healthy environment, i thought it was a great idea. when you are in the hospital, what tastes good, is not necessarily what hospitals produce and now they have made a real move to making healthier food they have been putting local produce into the hospitals for over a year now and now moving to put in hoe kal meatchicken p -- local meats and chicken and poultry i wanted to help them. >> not not always the taste but after visiting hospitals recently one thing i noticed right away, people running around with laptops for nutritional requirements for patients it is so different for every person because of their health concerns you can't have a blanket menu. >> well, you can't have a

8:35 am
vegetable stock and the hospitals are trying to make their own stock which is something i teach at the university of maryland eastern shores how to make fresh stock then i have chicken raised in maryland and we just cooked this down a little bit and i've got local cheese and this cheese is from maryland. so it is local sustainable, supporting farmers, good business and great for the hospital patient recovering or there for a long time. >> how do you do research to try to decide what might be the best. like trying to have a bit more variety. >> well, i worked in a hospital a long long time ago i have a little experience there, i think the thing is you want to make the food available for as many people as possible chicken is easy to digest, tasty, most people will eat it someone who doesn't eat beef or pork,
8:36 am
chicken is easy and a dish like this, if you take the cheese out you can reduce the sodium, i mean there is other than that, you've got vegetable stock, quinoa there is something here everybody can tolerate. >> since you worked in the industry a long time ago have you seen the dietary changes over the years when it comes to hospital foods. >> demands of the customer has changed both in restaurants and hotels, demands of the customer has changed they want good service wherever they go. the idea is to give them good food. maryland's hospital for a healthy environment wants to reduce the carbon footprint all that, that is a good idea but the customer when they are in the hospital they want something they can tolerate and don't want their family to bring them food. we wish you the best of luck hopefully more hospitals pick up on this and it continues to grow more and more i will let you finish susan thank you for being here.
