i feel like andrea roane should be doing this interview. she's from louisiana. >> i want to keep it simple for you. i know you want to get in the kitchen and understand more of it. i want you to use your mixer and all the things you have at home. what we have here is a cake with pecans in it. i baked it ahead of time and a cream cheese icing that is different, in that it has evaporated milk in it. a little touch of orange juice, too and i like it for the flavor. it makes it a little loose as you can see but it sets up nicely after you make it. >> and orange juice gives you vitamin c and makes this really healthy. >> oh, right. cake is a good food. a lot of talk about health right now and what kind of fats and food you should eat. i believe in moderation and eating dessert and working out and all three of them you have to have in your life if you want to lead a realistic life. you are going to have dessert. >> when you talk about healthy recipes, i notice from california you have avocado cup cakes. >> that's right. >> i did my research. i lo
