the ingredients are sugar, salt, and we have our aromatics, herbs , some thyme and rosemary and local apple cider. i buy my apple cider local here. we mix that up so that the sugar and lt dissolves. we put the turkey breast in there and let it soak overnight. that creates moisture and flavor. as you cook, what ends up happening is the moisture will inevitably coming out. by putting more moisture in, we end up with more at the end. >> should we cover this overnight? >> as long as it is completely covered in that. i stuffed it with apple cranberry stuffing and wrapped it with bacon. it is just a matter back and putting it in the oven for 45 minutes. >> obviously we're not talking about the stereotypical thanks giving >> on your table. >>it is a different approach. the nice thing about this is we develop our turkey for the buffet, and that is so that we can control the moisture for each component. dark takes a little longer than we, the dark meat finish. we have both components. >> to show you what that will look like inside there. wow. this beautiful turkey breast with the stopping -- stuffin
