cremoso, siempre utilizamos carnes con bastante grasa, con mucho nivel de gelatina porque el cabernet sauvignontar la reducciÓn del vino que le vamos a poner asÍ y para decorar le ponemos por encima una rama de canela, esto lo voy a poner para allÁ para que lo vea y luego terminamos con lo que por naturaleza va bien con un buen vino, y es una carne, quÉ hacemos con la carne. le gusta siempre ab var y * luego lo que vamos a hacer es tomamos la carne y comenzamos a dorarla, directamente la ponemos empezamos a escuchar el sonido de contacto de la carne con el sartÉn una vez se empieza a dorar y desarrollamos el sellado y caramelizaciÓn, lo que vamos a hacer es agregar algunos vegetales siempre de cocciÓn larga, cebollas un poquito de apio, los dejamos, cubrimos un con vino y siempre ba la skwaems y dejamos cocinar a fuego lento, el vino siempre se habla de una hora a una hora y media a 6 horas de cocciÓn en este caso un vacÍo se cocina en una hora y media y nos da un resultado maravilloso. pero quÉ pasa con el vino nos ayuda a suavizar los tejidos de la carne y al mismo tiempo cuando el vino se re
