the people into chilis are known as chili heads. we have people all over the contacts and send us heats and such. one time we heard about a very hot chili in india. it was supposed to be the hottest in the world. we couldn't get any seeds. but one of our members was in c india and said i found this chili here. 's not the chili but i think it's really hot. we grew it and so the first year we looked at it and said, this looks pretty hot. we should do replicated trials that test it out to see how hot it is. the next year when we did that, we found out that was the very first chili to ever hit 1 million heat units. and this is how we measure chili heat. jalepenos are about 10,000. this is 1 million. that became a whole new class of chili called super hot. translathes to ghost pepper. so we introduced ghost pepper to the united states. then it was interesting. after we said the goes peppers is the world's hottest. our friends and colleagues in trinidad said ours is hotter. we said send us the seed. so we tested the scorpion and we found

so he thought if he made chilies milder and more uniform, he would get non-hispanics to eat chilies, so he began a breeding program of interbreeding some of these local chilies, and began to search for a unique paths od type. he released new mexico number nine. he introduced this new pod type. farmers began to grow it. people liked it. it began a new industry and we began to can it so we could ship it back east on the trains so it the whole process, dehydrating the red chile, and canning and freezing the green chiles. up until that time, if you had made what we would say is a mexican food dish, you use different chilies, like a serrano, but now there was one that fit that niche. we were not as sophisticated so mexican food was anything that had chile spice to it, so you could have this, grow it, process it, and it could be used in what we are calling the mexican food industry at that time. so we didn't have these different kind of chilies. it really became the basis of the mexican food industry in the united states, so it is the father of the mexican food industry. the chile pepper i

. -- chilies are not native to a tropical rain forest. they are really happy with rain every three days. in 1540, francesco vess goes coronado came up on a mission to introduce spanish rule to new mexico. he introduced agriculture to the pueblo indians. in 1598, they really established a presence of the spanish in new mexico. they said the pueblo indians would grow chilies under the spanish agriculture. before then, there was what they called the waffle system. they have little squares where they would plant and catch the rainwater. the spanish introduced irrigation to bring water from the river to irrigate fields. they had incorporated that into their chile. we had chile beans growing here for a long time. then, in the late 1800s, we had a professor that was our first horticulturist and in our first graduating class. his mission was to find new crops for farmers to grow. then they were growing cotton, corn, that was it. he began to look at different horticultural products. he looked at fruit trees, sweet onions, he introduced pecans to t
