ingredients and things that are specific to the pacific northwest, when cedar tips are really coming in or doug fir tips or these beautiful little hood strawberries. we use the same techniques that you might do traditionally in russian infusions. and we just use those pacific northwest ingredients to do that. [sea gulls calling] bonnie: sonny is a fisherman that we've been working with since kachka's opened. he's part of the quinault tribe in washington. what's unique about sonny is that he really understands the product in a way that a lot of other fish purveyors don't. it's really wonderful when you find those sorts of relationships. sonny: so this is the quinault river here, and that's the mouth of the river down there. we have on the reservation 28 miles of coastline. the reservation itself is about 210,000 acres. and right now, we're fishing for coho and kings. that cycle, that pattern of harvesting in the fall time, is really ingrained in us. and it's like, you know, everybody gets excited when fishing starts, and it's really a special time. on the reservation, we manage our own river, our ow

and the encroachment of doug fir. as a good contrast, this is an area we recently worked. we have an open woodland here now that should a fire come through, it's not going to burn nearly as hot as if we look the other side of the road, an area that hasn't seen fire since 1945. >> reporter: if you make your way around the trails, the before and after is quite obvious. while the areas of worm can seem random, they are very targeted. >> down slope behind us we have one of the water district's water treatment facilities. and then on the other side to the south of us is one of our primary drinking reservoirs. post fire you get storms and you don't have a vegetative cover, water quality. >> you'll get runoff loaded with sediment that runs into the reservoirs and increases the cost to treat water. >> reporter: the idea is to mimic what fire would do to this land and prepare it for that eventuality. >> really, the purpose of the work is to try to influence the behavior of fire through breaking up the continuity of this lateral and horizontal fuels. >> reporter: this work actually
