in the northern italian town of modena, massimo bottura is taking his fight around the world.ted food for soul, a non—profit organisation that establishes community kitchens to fight food waste using surplus ingredients and world—class recipes. there are currently three refottorios in italy and others have been established in london, paris and rio dejaneiro. we are developing a 3d image of how we see italy, the culinary world, the future of food, ourselves, our identity, and forming a circle that is getting larger and larger. the garden is a little project because i am collaborating with a local high school, it is an agricultural high school. it is really overwhelming, the emotion that i have working with them, and i am so curious to see the results. and that's how the last 25 years have gone by in a flash, because one thing leads to another and we can ride off each other‘s enthusiasm, which can be very dangerous but fortunately we have two children and one of our children has a disability, and this disability has also given us really strong roots, does keep us very grounded.
