'cause if it gets too soft, it becomes what's called an insulin trigger, and the kids will just crave more, and more, and more sweet. so you wanna try to keep the macaroni cooked al dente, which is the italian secret. okay. this goes right into our baking dish. and just as if you were making this from a regular recipe, a little bit of bread crumb on top, although mine will be whole wheat. they really don't know the difference: whole wheat, whatever. a little grated cheese on the top to melt. this'll bake 350 for about 35 or 40 minutes until the macaroni's tender and the cheese is melted. and there we have mac and cheese that no kid will turn their nose up
